Hello all you lovely folk; I have the recipe for "Magic" from one of Chef Paul's early books. It's easy to make if you have an electric coffee grinder. Will post it as soon as I can dig it out.

I was confusing magic powder with something else. You don't need a coffee grinder to make magic powder. Just mix it well. Blackening can be tricky - if someone wants to know how to do it just email me (and I'll come to your house and do it) and NEVER do it inside the house. Unless you like your steak medium to well done, don't blacken beef.
1 tbsp paprika, 2 tbsp salt,1 tbsp garlic powder, 1 teas. cayenne, 1 teas black pepper, 1/2 teas thyme, 1/2 tsp oregano.
Great stuff. I double and triple up on the cayenne when I blacken chicken. Zingy...

Patti's seasoning could also double as an anti-itch powder. I think that PFL Bill should be the test subject. I'll take the pictures.

It is perfect for itch, especially the triple cayenne version but remember that all things must be coated with butter so the "magic" can work it charm and blacken, blacken... Don't do this in the house either. Running down a beach towards water would be ideal.

Paisano says he is large or medium. The real secret to Blackened foods is a good seasoned old cast iron skillet...Griswold if you can find one at an antique dealer.
