Kathy, well it's probably going to be awhile for me again, not sure where next. Thanks , I am glad you enjoyed it although I did forget a few days. LOL

This recipe comes from Rick's Garage in Denver.

1 lb. scallops, bay or sea - chopped
2-4 jalapenos - seeded and chopped
1 small white onion - chopped
2-3 Roma tomatoes - seeded and chopped
juice from 1/2 lemon
juice from 1/2 lime

They let their's maranade for a few hours but really a hour or so is fine.

Salt to taste just before serving
