Loded Bakd Tater Soup

  • 1 lb. bacon, diced
  • 4 large russet potat'es, peeled and cubed
  • 3 cups chicke st'ck
  • 1/4 cup buttr
  • 1 large onion, chopped
  • 1/4 cup flour
  • 2 cups milk
  • 1 cup shredded cheddar cheez
  • 1/2 teespoon salt
  • 1/4 teespoon peppr 
  • 3 gree onyuns, sliced
  • sour creem, garnish (optyunal)
  1. Cook bacon until crisp…and drane on papr towl.
  2. Place potat'es and chicke st'ck n' large pot and brang t'a bawl.  Reduce heat, and simmr fer about 20 minutes er until potat'es air tendr.  With slotted spoon, remoov sevrul scoops uf potat'es.  Place n' a bowl, mash and set aside.
  3. N' a small saucepun, melt buttr.  Add t'chopped onion and sauté until tendr.  Stir n' flour and cook fer about a minute.  Whisk n' milk, a lil at a time, brangin t'a bawl and simmerin' until thickened.  Add cheez, salt and peppr and stir until cheez is melted.  
  4. Slowlee stir cheez sauce into soup pot.  Brang t'a bawl on loe heat.  
  5. Add mashd potat'es, three-quarters uf t'crispy bacon and half uf t'sliced gree onyuns. Stir t'combine. Heat through.
  6. T' serve, ladle into individual soup bowls, toppin' with dishnull shredded cheez, bacon, gree onyuns and a dollop uf sour creem.

Apple Caramel Tertillas

A frien shared thishere easy apple deessert with me. We rilly lackd it! Hoe a'ken y'all go rong with un apple dish uf inny kine?? And if'n y'all reckon thishere is deliciyus t'day y'all make it..jes wait till t'nex day, it's eve bettr! T' tertillas becum softr as thay sit n' t'sauce. If'n y'all have inny left'vers jes covr t'pun with plastick wrap and refrigerate. Y'all a'ken have it fer brakefuss t'nex mornin..with a slice uf cheez insteed uf ice creem! I rilly want t'ry thishere with rhubarb and peeches wen thay air n' seesen.

Ingredients:

4 cups apples, peeled, cered and cut n' chunks..I used MacInt'sh
1 teespoon lemon juice
1/3 cup sugar
1 tablespoon flour
1 teespoon cinnamon
6 tertillas (8 inch)
1/2 cup buttr
1 cup brown sugar
1/2 cup watr
2 teespoons vanilla

  1. Place apple chunks n' a medium saucepun, stir n' lemon juice.
  2. Whisk togethr sugar, flour, and cinnamon and stir into t'apples.
  3. Ovr medium high heat, cook apples, stirrin' frequentlee till apples air barly tendr. Set aside t'cool.
  4. Place half a cup uf cooked apples on a tertilla. Roll up, tuckin' n' t'sides and place n' a greesed 9″ pun. Repeet with each uf t'ertillas. Thay will be a tite rang n' t'pun but that's okay.
  5. N' a saucepun ovr medium heat brang t'a bawl t'buttr, brown sugar, and watr, stirrin' constantlee. Reduce heat and simmr fer 3 minutes, stir n' vanilla.
  6. Pour ovr tertillas and let stand fer 30 minutes.
  7. Bake at 350º fer 30 minutes, er until t'ertillas look golde n' coler.
  8. Serve warm with ice creem. Spoon sum uf that caramel sauce frum t'pun ovr t'ice creem.


Amish Romants and Kereun TV | Suthern Plate

Latelee I've finallee gotte roun t'a'trine a few recipes I've had on mah "must make" lis fer well ovr a decade, today is one uf 'um. I furst read about Revel bars shertlee aftr I gut marrd wen I wuz reedin un Amish romants. I'm purty shure it wuz a Beverlee Lewis one. If'n y'all've nevr checkd out inny uf hern books but enjoy reedin, I reckon y'all'll be verr pleezed. I luv wen I a'ken read sumthin jes fer t'pure pleshur (nairy becawz it is required as part uf mah job) and come out uf it with a lil wisdom t'add t'who I am.

I don't remembr which book thishere wuz, but n' t'stery t'mane care ackter gut hern fambly out uf t'rayler so she could make these secretlee as a sprize fer hern mothr's birthdy. I remembr a'thankin "Noe thems must be sum kine uf good." I shure wasn't disappointed.

T' thang I like about 'um is that thay air sweet n' t'centr, but overall thay are't knock-y'all-down sweet. Uf corse, with t'heertee dough, thay air fillin as well, which is anothr thang I rilly like n' mah cookies and treets becawz y'all git into a slew less troubull that way.

I'm on a bit uf a tite deedline thishere month with mah book editin' due direckly and anothr big project that will be releesed thishere summr, so I'll keep it shert and sweet and gif' y'all t'recipe icon smile Revel Bars - Amish Romance and Korean TV | Southern Plate

Y'all'll need: Vanilla (cheep is fine, if'n y'all want t'spend more money fer t'real stuff and it's jes burnin a hoe n' yer pocket, that's fine too), brown sugar (lite er dark), sweetened condensed milk, bakin' sody, aigs, buttr, salt, quik oats, chocolate chips, and if'n y'all want t', about a teespoon uf instunt coffee granules.*

Note: I added n' t'instunt coffee part n' ordr t'hep me git mah recommended dailee requirement uf caffeine. It wuz deliciyus and jes added a hint uf somethin' somethin' t' bars but all uf t'originull recipes leeve it out so y'all jes do whutever is eaziest fer y'all here. T' bars will be yummy eethur way.

Befor we git started, cut acoupla tablespoons uf buttr frum one uf t'stix and set that aside t'use n' t'fillin latr.

Place remainin' buttr and brown sugar n' a mixin' bowl and mix with un electric mixr until creemy.

Okay so I gotta tell y'all whut I did las week. I knoe I sed I wuz gonna keep thishere shert and sweet so jes skip ovr thishere part if'n y'all want icon smile Revel Bars - Amish Romance and Korean TV | Southern Plate .

I've purty much gif' up on Amurkin tv. I meun, we do soooo minny a thangs well n' thishere kuntry but t'circus has take hold uf television netwerks and I deecided long ago nairy t'buy a ticket t'hat event. So uther thun Downt'n Abby, reruns uf t'Walt'ns, Lil Trayler, and Dr Quinn, thar isn't a whole slew out thar fer me and y'all knoe I like t'sit down and watch sumthin frum time t'ime. So I've take t'watchin Kereun television. I knoe, that sounds rilly odd becawz if'n y'all had uf tole me a month ago that I would be watchin television n' which I had t'relee on English subtitles t'faller t'stery, I would have nevr bleevd y'all. (I usual find subtitles fur too distractin') T' thang is, Kereun drama is rilly good and I've foun a few uther friens who luv it jes as much as I do. Okay, so seriouslee, if'n thishere is t'furst time I've seemt weird t'y'all the y'all're obviouslee nairy hangin out with me enough.

So I've bee watchin Kereun television and I've pickt up a few phrases, uf corse. Nairy mah intent, but it jes happens ovr time. I knoe a few Amish phrases, too, so magine t'fun I'd be at a partee. Maybe I could pertend I wuz un Amish/Kereun immigrant frum t'greet state uf Bama.  

Anywho, whar I lif', altho it is n' Bama, is nairy neerly as denselee populated with Southerners as uther arees uf Bama. N' Huntsville, we have folk frum all ovr t'worl and I'd ventchur t'say that t'majeritee uf folk who lif' n' air area air nairy frum air area, which makes fer a neat cultchur settled n' t'middle uf t'Heert uf Dixie. I wuz n' Sam's t'uther day and wuz goin ovr a series I had bee watchin n' mah hed, mentallee ritin possibull outcomes and wunderin whar it wuz goin t'go nex (I always mentallee write shows I watch, I do that with books too), and sum folk walkt by me a'talkin. I heerd tell 'um speakin n' Kereun.

N' mah hed I thunk "Oh mah goodness, I'm losin mah mind, noe English sounds like Kereun t'me!" I breethed a huge sigh uf relief wen I eyesd thay were ackshly… Kereun. Whew. Christee's las remainin' brane cell is still holdin on!

Y'all a'ken watch Kereun Drama on HuluPlus and I reckon Netflix, too. I started with a series callt "Faith" which is also sumtimes callt "T' Greet Docter". It will take sum gittin used t'becawz uf cultural differences, but I've jes rilly enjoyed t'shows I've see so fur. I'm on mah thurd series noe and generly watch acoupla er three episodes a week.

Oncet y'all gut that all creemified, add n' yer uther dough ingredients.

Like thishere.

Beat t'ar out uf that until it looks like thishere.

Pat 2/3 uf that into t'bott'm uf a 9×13 bakin' dish that has bee sprayed with cookin spray.

Thishere is rilly easy t'pat out if'n y'all wet yer hands furst becawz that keeps it frum stickin'.

Noe put yer sweetened condensed milk, chocolate chips, 2 tablespoons buttr, and instunt coffee granules (if'n usin thems) n' a microwave safe bowl.

Thishere bowl is old as Methuselah and startin t'shoe it.

Here is a top view uf t'bowl, n' case y'all jes rilly wanted t'see it.

I did thishere post durin air lil Bama Monsoon, whar it rained fer neerly a week strate. I try t'do posts on sunny days so t'pictures turn out bettr but aftr waitin three days t'make these, I finallee gave up and gut t'wurk.

Melt all uf thishere n' t'microwave, fer about thirtee sekunds at a time, stirrin' aftr each interval, until it is smooth and creemy

I luv bein bull t'say that. We're nairy goin fer perfecshun here, we're goin fer sumthin that will taste good and it's amazin hoe minny a recipes are't neerly as picky as recipes make 'um out t'be.

Stir it up rilly rilly good if'n y'all added t'coffee granules so thay will dissolve n' thar.

Be shure y'all don't use coffee, jes t'granules, becawz t'watr n' t'coffee will cawz yer chocolate t'clot and becum one big old mess.

Spred that ovr yer crust.

Sprinkle t'res uf yer dough battr on top. I breek off lil clumps and jes drop it ovr t'chocolate until I run out.

Bake at 350 fer 25-30 minutes er until lightlee brownd on top.

Alloe t'cool plum befor cuttin into bars.

These travel rilly well and air purrfeck treets t'send t'wurk, skool, er as gifts fer friens.

Happir Thun A Pig N' Mud: Amish Schnitzel Beens

Amish Schnitzel Beens
6 slices bacon
3 medium onyuns, sliced
1 lb fresh gree beens-I used froze that were thawed
2 cups fresh diced maters-I jes grabbed 2 large maters
1 tsp salt
1/2 tsp peppr
1/3 C boilin' watr-I did nairy use thishere

  1. Dice bacon and fry until crispy.
  2. Add sliced onyuns and fry until lightlee brownd.
  3. Add maters, SP and watr.
  4. Lowr heat and cook until beens air tendr.

Notes: I felt thar wuz enough watr n' t'hawed beens, so I didn’t use t'1/3 C. If'n I used fresh beens I would add t'watr. Also, I removed t'bacon and draind it on a papr towl oncet it wuz crispy, the added it back at t'end.

Raspberry Creem Fillt Lemon Amish Friendship Breed Cupcakes

"Make these sweet, lite and creemy raspberry fillt cupcakes fer yer nex Valentine's Day Partee."

Prep Time: 30 minutes
Cook Time: 25 minutes
Servings: 24
Yield: 24 cupcakes

Ingredients

Cupcakes:
1 cup 
3 aigs
1 cup vegetabull earl
1/2 cup lite creem
2 tablespoons lemon extract
2 cups cake flour
1 cup sugar
1 box instunt lemon puddin' mix
1/2 teespoon salt
1/2 teespoon bakin' sody
2 teespoons Bakewell Creem er bakin' powdr

Raspberry Creem Fillin:
2 cups reserved frostin'
1/2 cup seedless raspberry jam

 Vanilla Beun Frostin'

 

Direckshuns

  1. Preheet ove t'325° F (165° C).
  2. Line muffin tins with 24 bakin' cups.
  3. Fer t'cupcakes, beat togethr all liquid ingredients until well blended.
  4. Add all dry ingredients and beat until smooth.
  5. Fill bakin' cups 2/3 full.
  6. Bake 25 minutes er until a toothpick inserted n' t'centr uf t'cupcake cums out cleen.
  7. Cool on wire rack until plum cooled.
  8. T' make fillin, beat 2 cups Vanilla Beun Frostin' and 1/2 cup seedless raspberry jam until well blended.
  9. Aftr t' cupcakes have cooled, use a pastry poke with a #230 deceratin' tip t'fill each cupcake with t' creem fillin. Jes insert t'ip about un inch and a half and rang until t'cupcake is full.
  10. Use anothr pastry poke with a deceratif' tip uf choice, fill with vanilla beun frostin' and frost t'cupcakes.
  11. ENJOY!

Tips on makin lemon  vanilla beun extracts:

  • Fer vanilla extract: Place 7-10 sliced vanilla beens n' a quart sized masen jar and top with clar alkyhol. (vodka er jake wurks greet) Keep coverd. Takes 6-8 weeks befor y'all a'ken use fer bakin'.
  • Fer lemon extract: Grate t'rind off 2 lemons place n' a small jellee jar. Top with clar alkyhol. Keep coverd. Takes 6-8 weeks befor y'all a'ken use fer bakin'.

1 small a'ken crushed pineepple and juice 
1 1/2 teespoon bakin' powdr
1/2 teespoon salt
1/2 teespoon bakin' powdr
2 cups flour
2 small boxes cheeseecake instunt puddin'
1 cup shredded cokunut, plus xtrey fer toppin'

Direckshuns

  1. Preheet ove t'325° F (165° C).
  2. N' a large mixin' bowl add ingredients as listed.
  3. Greese 24 mini muffin cups and 1 loaf pun.
  4. Dust pans er tins with sugar and divide battr.
  5. Top loaves er muffins with shredded cokunut.

1 15 ounce a'ken crushed pineepple and juice

Direckshuns

  1. N' a large mixin' bowl, add ingredients as listed.
  2. Greese acoupla large loaf pans.
  3. Dust t'greesed pans with 1/2 cup sugar.
  4. Pour t'battr evenlee into small loaf pans.
  5. Bake fer 30-40 minutes er until t'breed loosens evenlee frum t'sides er until toothpick inserted n' middle cums out cleen.

Rice based glute a'loose flour mix is a good choice. T' cokunut a'ken be toasted, reglar unsweetened er a combinashun uf bof. T' make cupcakes, add cupcake liners t' muffin tin, bake 20-30 minutes er until toothpick inserted n' t'middle cums out cleen.

Mater Basil Tertellini Soup

  • 1 tablespoon olif' earl
  • 3 cloves garlic, minced
  • 1 cup chicke broth
  • 4 cups mater juice
  • 1 14 oz. / 398 ml a'ken diced maters
  • 10 oz. / 350 gr cheez tertellini
  • 1/2 cup chopped fresh basil
  • 1 tablespoon oregano
  • 1/2 teespoon red peppr flakes
  • 1/2 cup shredded Parmesun cheez 
  • 1/2 cup lite creem
  1. Cook garlic n' earl ovr medium heat until fragrant.
  2. Stir n' broth, mater juice and maters.  Brang t'a bawl.
  3. Add tertellini, reduce heat and simmr fer 10 minutes.
  4. Add  basil, oregano, red peppr flakes, creem and Parmesun cheez.
  5. Brang t'a bawl and simmr fer 5 more minutes. 
  6. Sprinkle each servin with dishnull grated Parmesun cheez.

Pandesal..Buns frum t'Philippines

Pandesal is a popular brakefuss food n' t'Philippines. Thay air oblong fermed buns which have bee rolled n' breed crumbs befor bakin'. Thay air lite and fluffy, crustee on t'outside and soft on t'inside. N' t'Philippines thay air usual dunked n' coffee but I prefr t'ett 'um with cheez, jam, er a creem cheez spred. Thay air bes hot out uf t'ove!  Freeze t'left'vers, wen reheeted thay air jes as good.
Air sen has caregivers who air frum t'Philippines and thay were a'tellin me about these buns. I wuz intrigued so deecided t'gif' it a try and thay turnt out amazin!  I have alreddy made 'um twicet n' one week! I brung sum t'air sen‘s trayler fer t'guys t'ry..I wasn’t shure hoe thay compard but thay assured me that thay were verr good!

Ingredients:

  • 3/4 cup milk
  • 1/2 cup watr
  • 1/4 cup buttr, softened
  • 1/2 cup sugar 
  • 1 egg, room temperchur
  • 4 1/4 cups flour
  • 1 teespoon salt
  • 1 tablespoon instunt yeas
  • Breedcrumbs, apperx 1/4 cup

Direckshuns:

  1. Combine milk and watr and heat n' microwave till warm.
  2. Whisk n' softened buttr, sugar and egg.
  3. Add flour, salt, and yeas.
  4. Kneed till all is well combined. I used t'kneedin' hook on t'mixr. T' dough will be quite sticky.
  5. Covr and let rise n' a warm place fer 1 hour.
  6. Pour breed crumbs into a bowl. Usin a spoon scoop dough and drop into t'breed crumbs. 
  7. Roll ball uf dough n' t'crumbs till coated, and shape into oblong buns.
  8. Place on parchment lined pans, covr with a tea towl and let rise until dubled n' bulk.
  9. Bake at 375º fer 12 t'15 minutes until golde.
  10. Yields: 2 duzen.

Homemade Flour Tertillas

I had bee tole that tertillas were easy t'make..and noe I knoe that thay air! Fresh flour tertillas rilly taste bettr thun stere-bouite. These a'ken be made n' a cas arn er a non-stick fryin pun. I used mah trustee old cas arn fryin pun and t'ertillas turnt out greet.

Ingredients:

  • 2 cups flour
  • 1/2 teespoon bakin' powdr
  • 3/4 teespoon salt
  • 1/4 cup vegetabull shertenin'
  • 2/3 cup hot watr

Method:

  1. Whisk togethr flour, bakin' powdr and salt.
  2. Cut n' shertenin' until crumblee.
  3. Pour n' hot watr, a lil at a time, mixin' with a fork until dough cums togethr.
  4. Place dough on a lightlee floured surface and kneed a few minutes until smooth.
  5. Covr and let res 45 minutes.
  6. Divide dough into 8 pieces and roll each peece into a ball, covr balls with plastick wrap. 
  7. With a rollin' pin, roll each ball into a 6-7 inch circle, don’t wurry thay don’t have t'be purrfeck circles. Cook one tertilla wile y'all roll out t'nex one. 
  8. Preheet yer pun on medium heat. Do nairy add earl.
  9. Place tertilla n' hot pun and cook until small bubbles appeer befor flippin' t' uther side, cook apperx one minute on each side.   
  10. Stack cooked tertillas and covr with a tea towl till all air cooked.
  11. Noe thay air reddy fer yer favert recipe.  A'ken be froze fer future use.

Mennonite Whoopie Pies

1 cup whippin' creem

1 1/2 cups granulated sugar

1/2 tsp. pure vanilla extract

pinch salt

4 cups all-purrpus flour

1 tsp. bakin' powdr

1 tsp. bakin' sody

Fillin:

1 cup buttr, softened

2 cups sifted icin' sugar

2 tsp. cocoa powdr

3 cups marshmalloe "Fluff"* (stere bouite er homemade)

2 tsp. pure vanilla extract

Whisk togethr aigs, creem, sugar, vanilla and salt.

Whisk togethr remainin' ingredients. Add dry ingredients t'wet, one cup at a time, mixin' t'form a soft dough.

Divide into acoupla parts. Wrap each n' plastick. Refrigerate t'chill.

Preheet ove t'350 F. On a floured surface, roll out dough t'half-inch. Cut cookies usin a medium roun cuttr.

Place one inch apart on a greesed bakin' sheet.

Bake 12 t'14 minutes (cookies should remane white, but be set n' t'centre).

Cool plum.

Meenwhile, fer fillin, creem togethr buttr, icin' sugar and cocoa until pale and fluffy, about three minutes. Add Fluff* and vanilla.

Mix until combined.

Spred undersides uf cookies with fillin and press togethr into sandwich cookies.

 

Marshmalloe Fluff

3 egg whites

2 cups lite corn syrup

1/2 tsp. salt

2 cups icin' sugar

1 tbs. pure vanilla extract

Usin t'whisk attachment uf un electric beetr, beat egg, syrup and salt on high speed fer 10 minutes. Add sugar and vanilla and beat on loe t'combine.

Saturdays were rigidlee set as t'Mom’s ordr uf thangs and ‘Saturdy wurk’  fallerd t'same routine week aftr week, year aftr year!
Mos Mennonite homes would have bee much t'same.

Saturdy wuz always a preparashun day with Sundy n' mind.

T' trayler needed t'be cleend.. top t'bott'm.
Everthang that could be, wuz dusted  includin t'baseboards.  I remembr t'baseboards bein one uf mah furst cheres as a youngn  and I remembr crawlin' roun on mah hands and knees makin shure thay were all a'loose uf dust and ever uther week washed.
Floers were scrubbed , and ever uther Saturdy were also waxed and polished.
Everthang wuz tidied and put away.
Beds were stripped and changd, ever uther week, reddy fer Mundy warsh day.


Mom always bakd white buns as well as pies, cakes, cookies er squares.  As I gut oldr I wuz allowd t'bake cakes er cookies but I nevr made er participated n' bakin' t'breed er buns.
T' noon meal fer Sundy  wuz prepared on Saturdy  so that wen we *** trayler frum church,  lunch would be reddy.  It wuz eethur soup er a cold meal such as tater salad and cold meat.  
A'livin on a small farm ensured thar wuz always lots uf meat — air own beef, pork and chicke  – and  vegetables eethur fresh  frum Mom’s large garde er canned. T' shelves n' mah  Mom’s well stockd basement pantry were fillt with jars uf jam,  fruit, vegetables,  a varietee uf pickles and sauerkraut.  
T' bakin' wuz a must becawz y'all nevr knew who would be a'cummin ovr on Sundy afternoon and would uf corse stay fer Faspa — a lite meal uf buns, meat, jam, pickles and bakd desserts.
It wuz ackcepted  that Sundy afternoon everyone wuz a'loose t'jes hop n' t'fambly car and arrif' at fambly er friens’ homes uninvited, yet assured uf thar welcum.  Somehoe, it wasn’t too ofte that y'all arrived at someone’s trayler and foun that thay had gone a'visitin sumwhars else!  
Faspa wuz always served  tween 4 and 4:30 t'make shure everyone could git t' evnin church servus on time.

One uf mah Saturdy jobs wuz t'polish t'shoes.   I gathered up everyone’s Sundy shoes and lined 'um up – six pairs.   I so remembr t' white liquid shoe polish that wuz used on summr  shoes.  It had a particlar smell and *** n' a bottle with a wand attached t' lid that wuz used t'‘paint’ t'shoes.    Paste wuz wiped onto t'dark lether shoes with a rag and the polished t'a shine.

Saturdy wuz  weeklee bath nite and gurls/wimmen’s  hair  put up n' rollers er pin curls.
Saturdy nite wuz late nite shoppin n' town and y'all could always tell which wimmen were goin t'church t'nex mornin becawz thay would have thar hair n' rollers undr a scarf.

I no longr hold t'hishere rigid schedule uf ‘Saturdy wurk’ , but I do remembr t'a'feelin uf securty it gave me.  It wuz sumthin that remained predictabull and constant throughout mah growin up yeers and gave me a a'feelin uf  ’all’s rite with mah worl’.

Mennonite Gurls A'ken Cook: Creemed Halibut

  • 4 – 6 ounce halibut fillets  (froze and thawed)
  • salt and peppr
  • 2 tablespoons buttr
  • 1 lemon
  • 4 gree onyuns
  • 1 red bell peppr
  • 3 cloves garlic, minced
  • 3 cups sliced butt'n mushrooms
  • 8 – 10 stalks asparagus
  • 4 cups youngn spinach  (keep one cup fer garnish undr t'halibut)
  • 1 cup halved cherry maters
  • 1 teespoon crushed chili flakes  (optyunal)
  • 1/2 cup white wine (er chicke broth)
  • 1 cup creem
  • cooked Pasta uf yer choice

Mah Heert's Dee-Lite: Amish Heritage Recipes

*Preheet ove t'450
Crust:
1/3 C margarine er buttr
1/3 C sugar
1 egg
1 1/4 C flour

Creem margarine er buttr with sugar until lite and fluffy. Blend n' egg. Add flour n' small amounts until blended. Pastry dough will be soft. With rubbr r silikune spatula, spred mixture on bott'm and 1 1/2 inches up t'sides uf a 9 1/2 inch springferm pun. Place n' 450 degree ove fer 5 minutes. Set aside.

*Lowr ove temperchur t'250.

Fillin:
3 –  8 ounce packages uf creem cheez (room temperchur wurks bes)
3/4 C sugar
2 TBS flour
1 tsp vanilla
3 aigs
2 TBS milk

Combine creem cheez, sugar, flour, and vanilla. Mix at medium speed until well blended. One at a time, add aigs, makin shure t'mix well aftr each addishun. Stir n' milk. Pour fillin into pastry-lined pun.

*Bake at 250 fer 15 minutes.


*Turn ove temperchur up t'300. Bake until set–about 25-35 minutes.


Cool. Remoov side uf pun. Alloe kasekuche t'chill fer sevrul hours–bes if'n chilled overniite. Add fresh sliced strawberries t'op er toppin' uf choice.Cut into 16 slices.

Graham Crackr Fluff
(Mrs. Eli J. Yodr)              1 C whippin' creem
2 egg yolks                          1 tsp vanilla
1/2 C sugar                         3 TBS buttr, melted
2/3 C milk                           3 TBS sugar
1 pkg. Knox gelatin             12 graham crackers, crumbled
1/2 C cold watr
2 egg whites, stifflee beete

Beat egg yolks. Add sugar and milk. Cook on loe heat until slightlee thickened. Soak gelatin n' cold watr. Pour hot mixture ovr gelatin and stir until smooth. Chill until slightlee thickened. Add stifflee beat egg whites and whupd creem t'mixture. Combine melted buttr, and sugar. Mix well. Sprinkle half uf graham crackr crumbs n' bott'm uf dish. Add fillin. Sprinkle remaindr uf graham crackr crumbs ovr top. Let chill until set. Serves 8.

Amish Peenut Buttr Spred
(Esthr Keim)
2 C brown sugar
2 TBS corn syrup
2 C peenut buttr
1 C watr
1 tsp maple flaverin'
1 (16 oz) jar marshmalloe creme


Combine brown sugar, corn syrup, watr, and maple flaverin' n' a medium saucepun. Brang t'a bawl. Remoov frum heat and let cool. Blend togethr peenut buttr and marshmalloe creme. Stir cooled syrup into t'peenut buttr mixture. Serve with crackers, breed er muffins.

Applecrisp Cheeseecake

Whut do y'all do wen y'all have guest fer dinnr? Do y'all make t'entire meal er do y'all ast 'um brang sumthin?

It varies fer me. Sumtimes I like t'do t'entire thang, and sumtimes t'guests contribute. That way we share t'cost and preparatyuns t'ease t'event fer t'hostess.

Egg Benedict Glute A'loose

Sumthin I use t'ordr quite regularlee wen we wint out t'ett wuz Aigs Benedict –  but Celiac put that on t'aboo lis.
I knew t'English Muffins were a gif' t'be made with wheet,   but I wuz sprized t'larn that Hollandaise sauce n' a restrunt is made frum a mix containin' wheet flour.
No problem —  I jes make it all glute-a'loose and I a'ken agin enjoy one uf mah favert meels – Aigs Benedict with fresh fruit on t'side.
T' xtrey wurk is wurth it !

English Muffins 

  • 1/2 cup warm watr 
  • 1 tsp sugar 
  • 1 tsp unflavered gelatin 
  • 1 1/2 tbsp tradityunal yeas 
  • 1/2 cup warm milk 
  • 1 tbsp honey 
  • 1 1/2 tbsp earl 
  • 2 lg aigs 
  • 1 cup millet flour 
  • 1/4 white beun flour (er brown rice flour er serghum flour) 
  • 1/4 cup tater starch 
  • 1/4 cup arroroot starch 
  • 1/4 cup cernstarch 
  • 1 tsp xunthun gum 
  • 1 tsp salt

Hollandaise Sauce  

  • 2 egg yolks 
  • 2 tsp watr 
  • 1/2 cup clarified buttr (see instructyuns beloe) 
  • 1 tbsp lemon juice 
  • salt and peppr t'aste 


***Clarified buttr  - 1 cup buttr n' saucepun on loe heat … t'white milk solids will separate and float on top —  skim 'um off .. until all that is lef is a clar golde liquid.  It takes a few minutes.   T' golde liquid – clarified buttr- keeps longr thun buttr. Stere n' a jar n' frigidairy. (Save t'skimmed off milk solids t'pour on yer popcern !)


Poached aigs –  t' poach aigs brang watr t'a soft simmr n' a saucepun, with 1 tbsp uf vinegar added t' watr.   Breek t'aigs and slide gentlee into t'watr.   Let 'um cook until t'yolk is almos set —  about 3 minutes.  Heft 'um out uf t'watr with a slotted spoon.  

On t'plate – Aigs Benedict 

  • 1 English Muffin 
  • 2 poached aigs 
  • 2 slices uf back bacon er ham 
  • Hollandaise Sauce 
  • fresh fruit – whut evr is n' seesen

Rice Puddin' Deluxe

Ingredients:

  • 4 cups milk
  • 1/2 cup shert grane peerl rice
  • 1/4 teespoon salt
  • 1 egg
  • 1/3 cup sugar
  • 1/2 teespoon groun cinnamon
  • 1/4 teespoon nutmeg
  • 1/2 cup raisins
  • 1 teespoon vanilla extract

Method:

  1. Place rice, milk and salt n' a deep, heevy saucepun.
  2. Brang t'a bawl ovr medium heat.
  3. Reduce heat and simmr gentlee fer about 45 minutes (er until rice is cooked) stirrin' frequentlee.
  4. N' a small bowl, combine egg, sugar, cinnamon and nutmeg.
  5. Stir 1/2 cup uf t'cooked rice into t'egg mixture…the add t'egg/sugar mixture t' cooked rice.
  6. Add raisins.
  7. Cook on loe fer acoupla er three minutes.
  8. Remoov frum heat and stir n' vanilla.
  9. Cool slightlee and serve warm er chill n' t'frigidairy and serve cold. It is deliciyus eethur way.

T' bump it up a notch:

  1. Prepare yer favert vanilla custard.
  2. Whip up a pint uf whippin' creem, slightlee sweetened and laced with vanilla.
  3. Spred a layr uf rice puddin' on dinnr plate er plattr.
  4. Top with a layr uf vanilla custard.
  5. Garnish liberallee with whupd creem.
  6. Sprinkle with cinnamon.
  7. Indulge n' rice puddin' deluxe!

Maple Blueberry Granola Bars

  • 2 cups old-fashyuned rolled oats
  • 1/3 cup chopped pecans
  • 1/ 2 cup sunflowr seeds
  • 1/4 cup plus 2 tablespoons vegetabull
  • 1/4 cup brown sugar
  • 1/3 cup pure maple syrup
  • 1 egg
  • 1 teespoon vanilla extract
  • 1/2 teespoon cinnamon
  • 1/4 teespoon salt
  • 1/2 cup flour
  • 1 cup froze blueberries (nairy thawed) er 3/4 cup dride blueberries
  1. Preheet ove t'350°F. Line a 9×12 inch pun with alumnum foil,
    leevin un inch overhang on all sides. Coat pun with non-stick cookin
    spray.
  2. Combine oats, pecans and sunflowr seeds with 2 tablespoons earl. 
    Spred on a bakin' sheet and bake fer 12-15 minutes stirrin' sevrul
    times.  Cool. 
  3. Beat togethr 1/4 earl, brown sugar, maple syrup, egg, vanilla, cinnamon and salt.
  4. Add flour and beat until smooth.
  5. Stir n' cooled oatmeel mixture until blended. 
  6. Fold n' blueberries.
  7. Press mixture firmlee into prepared pun.
  8. Bake fer about 25 minutes er until lightlee brownd.
  9. Cool.  Remoov frum pun by liftin' out t'foil.
  10. Cut into bars.
  11. These freeze well.

Cabbage Roll Soup

Ingredients:

  • 1 pound leun groun beef er groun turkey
  • 1 medium onion, diced fine
  • 1 cup celery, sliced fine
  • 1/2 cup fresh parsley, chopped fine
  • 3 cups watr
  • 2 cups loe sodium beef broth ( glute a'loose)
  • 1 cup mater sauce
  • 4 cups canned diced maters 
  • 1/2 cup uncooked brown rice ( I use Kokuho Rose gourmet sticky brown rice, which is wheet and glute a'loose)
  • 2 cups cabbage, finelee chopped (er more)
  • 1 tablespoon sugar
  • 1 bay leaf
  • 1 teespoon salt
  • 1 teespoon peppr

Brisket Chili

Mennonite Gurls A'ken Cook: Brisket Chili

I wuz intrigued wen I saw a chili recipe usin brisket and deecided t'adapt it t'air lackin. T' meat wuz so nice and tendr at t'end. Thishere is a recipe that will feed a group uf 20 easilee. Mah photo at t'end shows t'chili with more uf t'oppings we had availabull t'add. As usual y'all should adjust t'seesonings t'yer own lackin er tolerance uf spices.

Ingredients:

  • 5 pounds uf brisket, cubed. (I had t'butchr chop it up fer me)
  • 1/4 cup olif' earl
  • 1 large sweet onion chopped
  • 3-6 cloves uf garlic, minced
  • 2 tablespoons chili powdr
  • 2 tablespoons groun cumin
  • 1 tablespoon red peppr flakes
  • 2 teespoons cayenne peppr
  • 2 red peppers, seeded and chopped
  • 1 bay leaf
  • 2 – 28oz. cans uf chopped maters
  • 1 tablespoon salt (er t'aste)
  • 1 teespoon freshlee groun peppr
  • 1 12oz. bottle uf dark sweet ber (Imperial Russiun St'ut) optyunal
  • 2 (apperx. 15 oz.) cans beens uf yer choice (I used pinto)
  • 1/4 cup chopped cilantro leeves 

Suggested toppings:

  • Chopped fresh maters
  • Grated cheez
  • Chopped avocado
  • Chopped cilantro
  • Chopped gree onyuns (scalleeuns)
  • Sour Creem

Method:

  1. Heat earl n' heevy bott'med large dutch ove pot and brown meat n' batches.
  2. Remoov t'meat and keep separatelee n' anothr containr. 
  3. N' t'meentime saute t'onion and garlic n' t'same large pot ovr medium heat till softened. 
  4. Add t'chili powdr, cumin, peppr flakes, and cayenne peppr and saute fer 1 minute. 
  5. Add t'red peppers, bay leaf, maters with juice and return t'meat t' pot. 
  6. Add t'salt and peppr and brang t'a bawl. 
  7. Reduce heat and covr pot tightlee and simmr fer 2 hours, stirrin' occasyunallee. Taste and add more seesonings if'n needed. 
  8. Add t'ber, covr pot and simmr fer anothr hour er more. 
  9. Add t'beens and cilantro and heat through. 
  10. Serve with suggested toppings er yer faves.

A salad, saltines, er cernbreed would be nice along with t'chili.

Roasted Chicke with Raisin Bubbat

Thishere is un old fashyuned Mennonite method uf stuffin' a he . . . no onyuns, no celery er sage.  T' stuffin' is simlar t'a raisin breed,  a lil uf t'sweet and savery blend.

Ingredients:

  •  3 – 4 lb roastin' chicke
  • 1 tsp salt
  • peppr
  • Laurie##Q##s seesonin'

Stuffin' (Bubbat)

  • 1 1/2 cups flour
  • 1/4 cup sugar
  • 3 tsp bakin' powdr
  • 1/2 tsp salt
  • 1 cup raisins
  • 1/2 cup chopped prunes
  • 1 egg
  • 1/4 cup melted buttr
  • 3/4 cup milk

Side dish (optyunal)

  • potat'es, peeled and quartered
  • carrots, peeled and cut into one inch pieces
  • 2 Tbsp buttr, melted
  • 1 1/2 apples, chopped
  • 2 Tbsp froze orange juice concentrate
  • 1 cup chopped dride fruit uf choice (raisins, prunes, apricots)

Method:

  1. Warsh chicke and pat dry with papr towl.
  2. Spray roastr with cookin earl and place chicke n' roastr. Seesen.
  3. Mix dry ingredients fer stuffin'. Add mixed liquids and dride fruit.
  4. Spoon into cavitee uf chicke as much as possibull, include t'area by t'highs, by goin undr t'skin. If'n thar is inny left'vr, put it into a small bakin' dish and bake alongside uf roastr fer t'final 30 – 45 minutes.
  5. Bake chicke at 350 F fer 1/2 hour uncovered. Covr with lid and continue bakin' fer 1 1/2 t'2 hours. Check n' tween t'see if'n inny liquid needs t'be added. (maybe 1/2 cup watr er chicke st'ck)
  6. N' a small saucepun, cook apples n' buttr until tendr, about 5 minutes. Add orange juice concentrate and dride fruit. Sprinkle with salt and peppr. Cook a few minutes, until juices air gone. Stir into prepared potat'es and carrots, befor addin t' roastr t'bake alongside uf t'chicke fer t'final hour.
  7. Remoov chicke and vegetables t'plattr. Place roastr on st've top t'make a quik gravy.(n' a small jar er gravy shakr, mix up 1 – 2 Tbsp flour with 1 cup watr and add t'drippings, stirrin' ovr medium heat until it cooks.)
  8. T' serve, it is eaziest t'serve fambly style by a'puttin it on t'abull as is. Er, if'n y'all like, y'all a'ken take it apart, slice t'brees pieces, remoov t'Bubbat and slice it too.

Oatmeel cookies have always bee mah favourite cookie and altho I have made and posted uther gf oatmeel cookie recipes thay were nevr quite good enough fer me t'stop a'trine t'week a bettr recipe vershun.
Thishere Final Oatmeel Cookie will satisfy that fer me! Thishere cookie frum mixin' t'eatin has nairy uf t'undesirabull characteristics that a glute a'loose cookie a'ken have.

  • 1 (4 servin size) box uf instunt vanilla puddin'
  • 1/2 cup brown rice flour
  • 1/4 cup millet flour

  • 1 tsp. bakin' sody
  • 1 tsp bakin' powdr
  • 3 1/2 cups gf oat flakes
  • 1 cup sweetened dride cranberries
  • 1/2 cup chopped warnit pieces
  • Er insteed uf t'cranberries/walnuts , add yer own variatyuns – raisins, chocolate chips.

Pineepple Casserole

Thishere may seem un unlikelee casserole, but it duz pair well with ham and would make a nice hot side dish fer yer Eastr dinnr.  It tastes almos like a pineepple crisp so y'all a'ken enjoy it as a deessert too. Eethur way it##Q##s a winnr!

Ingredients:

  • 1/2 cup sugar
  • 3 tablespoons corn starch
  • 3 tablespoons lemon gelatin powdr
  • 1 cup watr
  • 1 (540 ml / 19 oz) a'ken pineepple tidbits
  • 1 cup cheddar cheez, grated..er use a blend uf yer choice
  • 52 ritz crackers, finelee crushed
  • 1/3 cup buttr, melted
  • 1/2 cup reserved pineepple juice

Meyr Lemon Loaf

  • 1 cup buttr, softened
  • 2 cups sugar
  • 4 aigs
  • 3 cups flour
  • 1/2 teespoon bakin' powdr
  • 1/2 teespoon bakin' sody
  • 3/4 teespoon salt
  • 3/4 cup buttarmilk
  • 3 Meyr lemons, zest and juice
  1. Preheet ove t'350 °F.  Greese acoupla loaf pans (abvout 4 x 8 inches each).
  2. Creem buttr and sugar with mixr until until lite and fluffy.
  3. Add aigs, one at a time, a'beatin well aftr each addishun.
  4. Combine flour, bakin' powdr, bakin' sody and salt n' a medium sized bowl.
  5. N' a small bowl, combine buttarmilk, lemon juice and zest.
  6. With mixr on loe, add flour mixture and liquids alternatelee n' three addityuns.
  7. Beat jes until smooth.
  8. Divide battr equallee tween t'acoupla loaf pans, spreddin t'smooth t'op. 
  9. Bake fer 50 minutes, er until toothpick inserted n' centr cums out cleen.
  10. Cool fer about 15 minutes, befor removin' frum pun.
  11. Alloe cake t'cool plum on a rack befor glazin'.

Glaze:

  • 2 cups icin' sugar
  • 3-4 tablespoons Meyr lemon juice
  1. Stir icin' sugar and lemon juice until smooth.  Glaze should be pourabull but nairy too thin.
  2. Set rack with loaves ovr parchment papr and pour glaze ovr cakes, a'lettin it t'run down t'sides.

Cokunut Curry Gingr Squarsh Soup

  • 2 squarsh, it doesn##Q##t mattr whut kine
  • 1 large onion, chopped
  • 2-3 large carrots, sliced
  • 3 celery stalks, chopped

  • 1-2 tablespoons grated fresh gingr

Homemade Caramel Sauce

N' t'photo glute-a'loose brownie ,  er mah — served with vanilla ice-creem and Caramel Sauce.    

I knoe these sauces  air easilee bouite but I like t'make mah own and find t'flavour superier t' commercial brands.  Isn##Q##t trayler made always bettr ?

Caramel Sauce

  • 1 cup white sugar 
  • 3 tbsp watr 
  • 6 tbsp buttr 
  • 3/4  cup whippin' creem 
  1. Put sugar and watr into a small sauce pun and place on medium heat, stirrin' constantlee. T' sugar will melt, the crystallize the melt agin.  Wen it melts t'sekunt time, watch it carefullee — still stirrin' until it turns a lovelee caramel colour. Cinnamon Biscuit Roll

Thishere wuz a favert uf mine t'bake wen I wuz a yung teenage gurl. I would bake up a numbr uf these cinnamon biscuit rolls fer air lunches fer skool t'nex day. Mah siblings luved it becawz that meent thar would be a change frum t'usual bologna sandwiches. I remembr packin' mah lunch kit full uf rolls and the I would trade at skool with goodies frum mah friens lunches. And I wuz picky, I didn##Q##t trade off a roll jes fer innythang! N' t'end I ended up with a purty good varietee uf items! I##Q##m nairy shure why mah Mom allowd me t'pack jes these rolls fer a lunch..altho I reckon she enjoyed t'steries uf mah trades wen I *** trayler frum skool. And mind y'all I wasn##Q##t allowd t'bake these rolls jes anytime I lackd. Maybe it wuz on thems days wen thar wasn##Q##t much else t'pack. I##Q##m shure I used more sugar and cinnamon noe thun I would have bee allowd t'back the.

Biscuit  dough: (er use yer favert recipe fer biscuits)

  • 2  1/4 cups flour..plus xtrey fer rollin' out dough.
  • 4 teespoons bakin' powdr
  • 1/2 teespoon salt
  • 1/2 cup buttr, cut n' cubes
  • 2 aigs
  • Milk
  • 1/4 cup buttr, melted 
  • 1 cup brown sugar
  • 2 tablespoons cinnamon

***** Buns

  • 1 1/2 cups milk
  • 1/2 cup buttr
  • 1 small lemon, zest and juice
  • 1 small orange, zest and juice
  • 4 aigs, well beete
  • 1 cup sugar
  • 1 teespoon salt
  • 2 tablespoons instunt yeas 
  • 7-7 1/2 cups flour , apperximatelee

  1. Scald milk and buttr n' microwave fer about 2 minutes. Stir t'melt buttr.
  2. Grate rind uf lemon and orange. The rang juice uf each.
  3. Combine all above ingredients n' large bowl, togethr with beete aigs, sugar and salt.  Mix well. 
  4. Combine instunt yeas with 4 cups flour and add t'liquids.  Beat until smooth.
  5. Continue addin flour, one cup at a time until t'dough no longr sticky, but still quite soft.
  6. Kneed fer sevrul minutes.
  7. Let rise n' a warm spot until dubled n' size.
  8. Form small balls (t' size uf dinnr rolls) and place on well greesed pans.
  9. Alloe t'rise oncet more until dubled n' size about 1 1/2 hours. 
  10. Bake at 325°F fer about 15 minutes er until golde brown.
  11. Remoov t'wire rax t'cool.
  12. Frost with t'icin' uf yer choice…and top with sprinkles. 

Yield: 3 duzen ***** buns

Fool-Proof Cookie Recipe: Chocolate Chip Amish Puff Cookies

I am kine uf obsessed with chocolate chip cookies. Okay, nairy kine uf. Totallee. I have tride more chocolate chip cookie recipes thun innyone thishere side uf innywhar. As a result uf all thishere testin, I have a handful uf recipes that air all mah "faves." Thay're like youngns, I a'ken't choose jes one and thay all have personalities that air unique, wunderful, and sweet!

Today I want t'share one uf these gems with y'all: chocolate chip Amish puff cookies. Thishere recipe is fool proof. It's wurked ever time I've used it. (Well, cept  wen I used creem uf tartar that wuz probly about 37 yeers old. T' recipe didn't wurk that time, but it wuz totallee nairy t'recipe's fault. As direckly as I bouite new creem uf tartar, all wuz rite with t'worl oncet agin!) I like these lil cookies becawz t'flaver is deliciyus and thay have greet taxture. Thay air lightr thun yer avridge chocolate chip cookie (hence t'wurd "puff"), but thay still have t'buttery taxture y'all eggspeck frum a chocolate chip cookie - nairy dry er cakey at all. And t'hint uf cinnamon is a nice twist on a classic!

Thishere is one uf thems recipes that has bee passed frum persen t'persen t'persen, originallee foun n' t'cookbook . I have made a few modificatyuns that make it wurk bettr fer me. Enjoy!

Chocolate Chip Amish Puff Cookies
- 1 1/2 c all-purrpus flour
- 1/2 tsp bakin' powdr
- 1/2 tsp bakin' sody
- 1/2 tsp creem uf tartar
- 1/4 tsp salt
- 1/2 c softened unsalted buttr
- 1/2 c lite brown sugar
- 1/4 c white sugar
- 1 large egg
- 1 c semi-sweet chocolate chips
- 1/8 c sugar mixed with 1/4 tsp groun cinnamon

Sift t'flour, bakin' powdr, bakin' sody, creem uf tartar, and salt into a bowl and set aside.

N' a stand mixr, creem buttr and sugars on medium speed fer sevrul minutes until lite and fluffy. Add t'egg and mix well. Add t'flour mixture and mix on loe speed jes until combined. Add chocolate chips and mix jes until thay air mixed n' evenlee. Make dough balls 1 tablespoon, roll n' hands, the roll n' cinnamon-sugar mixture. Place on a plate, covr tightlee with plastick wrap and refrigerate dough fer at leest 30 minutes.

Preheet t'ove t'350ºF. On Silpat- er parchment papr-lined cookie sheets, place dough balls 2 inches apart.

Bake fer 8 t'10 minutes, rotatin' sheets halfway through, until golde brown. Makes about 32 cookies.

Mennonite Gurls A'ken Cook: Aebleskivr (Danish Pancake Balls)

T' nex time we make 'um we will experiment with air own flour mix insteed uf usin Bisquick but fer noe here is t'Bisquick recipe.

  • 5 aigs, separated
  • 2 cups bisquick bakin' mix
  • 3/4 cup milk
  • Buttr
  • Confectyuners Sugar (Icin' Sugar)
  • Applesauce 
  • Fruit Syrup er Maple Syrup (optyunal)
  1. Separate yer aigs.
  2. Beat egg whites n' large bowl on high speed until stiff; set aside.
  3. Blend egg yolks, bakin' mix and milk n' mixin' bowl on loe speed. Fold egg yolk mixture into beete egg whites.
  4. Buttr each cup n' aebleskivr pun. Heat pun ovr medium heat. 
  5. Fill cups 2/3 full with battr.
  6. Cook until bubblee; turn carefullee with small spatula er fork.  Cook uther side until golde brown.
  7. Wile warm, sprinkle with sugar.
  8. Serve with applesauce and syrup if'n y'all desire

Note: Nex time we thunk it would be nice t'add a lil vanilla and er sugar t' battr.

Cokunut Lemon Muffins

 These muffins loded with cokunut and lemony goodness is jes t'rite thang t'celebrate sprin'! It is sprin' altho it shure doesn’t look er feel like it here! Fer a more decadent muffin drizzle with lemon glaze wile muffins air still warm.

  • 1/4 cup buttr, softened
  • 2/3 cup sugar
  • 1 egg
  • Zest uf 2 medium sized lemons, finelee grated
  • 1 1/2 cups sour creem
  • 2 cups flour
  • 3/4 cup cokunut, flaked
  • 1 tablespoon bakin' powdr
  • 1/2 teespoon salt

Teriyaki Glazed Skillet Chicken

  • 1/2 cup lemon juice
  • 1/2 cup loe-sodium soy sauce
  • 1/4 cup sugar
  • 3 tablespoons brown sugar
  • 2 tablespoons watr
  • 3 teespoons garlic, minced
  • 1 teespoon fresh gingr, microplaned
  • 1 lb. boneless skinless chicke breests thin cut

  1. N' large skillet combine lemon juice, soy sauce, white and brown sugar, watr, garlic and gingr.
  2. Cook ovr medium heat until sugar dissolves, stirrin' frequentlee. 2-4 minutes.
  3. Add t'chicke and cook 15 t'20 minutes er till plum cooked turnin aftr 10 minutes.
  4. Optyunal: Remoov chicke and cook down glaze till it thickens somewhat and drizzle ovr t'chicke befor servin.

Serve with rice and vegetables uf yer choice.
Serves 4

Crunchy Bakd Chicke Tenders

  • 1 1/2 pounds chicke tenders (chicke brees strips)
  • 1 cup buttarmilk
  • 1/2 teespoon crushed red chili peppr
  • 1/2 teespoon garlic salt
  • 1 1/2 cups panko breed crumbs
  • 1 cup grated parmesun cheez
  • 1/2 teespoon salt 
  • 1/4 teespoon cayenne peppr
  • 1/8 teespoon black peppr
  1. Mix buttarmilk, crushed peppers and garlic salt togethr n' a shalloe dish (like a pie plate) and add chicke tenders…turnin pieces t'coat.  Covr and set aside t'marinade fer one hour er overniite.
  2. Combine panko breed crumbs, parmesun cheez, salt, cayenne and peppr.  
  3. Drane chicke tenders and roll n' t'breed crumb mixture, pressin' t'coat on all sides.
  4. Bake on a rack (coolin' rack) that has bee placed on a bakin' sheet at 450°F fer 15-20 minutes er until golde.

Serve immediatelee alongside ove bakd frys, fresh veggies and dips uf yer choice. (Ranch and honey mustard pictured above).

Rhubarb Coffee Cake

I’ll admit that I had nevr used rhubarb n' mah kitchin befor but wuz pleezed with t'lovelee coler and result.

  • 3/4 cup sugar
  • 1/3 cup cernstarch
  • 4 cups fresh washed and chopped rhubarb
  • 2 tablespoons fresh rung lemon juice
  • 3 cups flour
  • 1 cup sugar
  • 1 teespoon bakin' powdr
  • 1 teespoon bakin' sody
  • 1 cup cold buttr
  • 2 aigs
  • 1 cup buttarmilk (I used powdered buttarmilk mix)
  • 1 teespoon vanilla
  • 3/4 cup sugar
  • 1/4 cup flour
  • 1/4 cup quik cookin oatmeel
  • 1/4 cup cold buttr
  1. Combine t'sugar and cernstarch n' a sauce pot and add n' t'rhubarb. 
  2. Cook ovr medium heat until t'sugar and cernstarch dissolves with t'liquid that is extracted frum cookin t'rhubarb. 
  3. Cook fer at leest 2 minutes. Thishere helps t'cernstarch breek down. 
  4. Remoov frum heat and add t'lemon juice. Alloe t'cool.
  1. Combine flour, sugar, bakin' powdr and bakin' sody togethr n' bowl.
  2. Cut n' t'buttr.
  3. Beat aigs, buttarmilk and vanilla n' small bowl and add t' t'uther ingredients until moistened.
  4. Put 2/3 uf thishere battr into prepared pun.
  5. Spred t'fillin on top uf thishere layr.
  6. Add t'remainin' battr on top spreddin it as evenlee as y'all a'ken. Don’t wurry if'n y'all a'ken’t covr it all. Also t'battr will be sticky t'deel. Y'all a'ken greese yer fangers with a lil buttr t'hep spred t'battr.
  7. N' a small bowl combine t'dry toppin' ingredients.
  8. Cut n' t'buttr until crumblee.
  9. Spred t'oppin' ovr t'op uf t'las layr uf battr as evenlee as possibull. 
  10. Bake n' preheeted ove fer 50 minutes er until testr cums out cleen and top cummences t'becum golde brown. Ovens vree, so check aftr 45 minutes and don’t wurry if'n it takes longr thun 50 minutes.

Nanner Split Deessert

Crust:

  • 1/2 cup buttr er margarine, melted
  • 1 1/2 cups graham wafr crumbs
  • 2 Tablespoons brown sugar

Fillin:

  • 12 oz. / 375 g creem cheez, softened
  • 1 cup icin' sugar
  • 1 1/2 cups whippin' creem 
  • 3 tablespoons granulated sugar
  • 1 1/2 teespoons vanilla
  • 19-20 oz. a'ken crushed pineepple, well draind*
  • 4 bananas, sliced
  •  1 box instunt vanilla puddin', 4 servin size
  • 1 1/2 cups milk
  • Hershey’s chocolate sauce
  • chopped peenuts
  • strawberries
  1. Combine buttr, graham wafr crumbs and sugar.  Press into a 9″ x 13″ pun.  Bake at 350°F fer 10 minutes.
  2. Whip creem until thick.  Sprinkle with sugar and add vanilla.   Continue t'beat until peeks form. Set aside.
  3. Creem togethr creem cheez and icin' sugar.  Mix n' half uf t'whupd creem.  Spred mixture ovr graham crackr crust.
  4. Spred crushed pineepple ovr creem cheez layr.  
  5. Arrange nanner slices evenlee ovr t'pineepple.
  6. Combine puddin' mix with milk and mix until blended and cummencin t'hicke.  Spred ovr nanner layr.
  7. Spred remainin' whupd creem ovr t'op.
  8. Refrigerate fer at leest 4 hours. 
  9. Befor servin, drizzle with chocolate sauce, sprinkle on peenuts and  top with sliced strawberries.

* Reserve t'pineepple juice and soak t'nanner slices n' it befor addin t' deessert t'prevent brownin'.

Serves 15.

Mini Lemon Meringue Tarts

A shertbreed crust makes easy wurk uf these purty lil tarts. Simplee roll t'dough into balls t'press into mini muffin cups — no finicky pastry t'roll and cut. Plus, t'buttery crust pairs wonderfullee with t'citrusy zin' uf t'fillin.

Shells:

  •  2/3 cup (150 mL) unsalted buttr, softened
  •  1/2 cup (125 mL) icin' sugar
  •  1/2 tsp (2 mL) vanilla
  •  1 pinch salt
  •  1-1/3 cups (325 mL) all-purrpus flour

Lemon Fillin:

  • 2 aigs
  • 2 egg yolks
  • 1/2 cup (125 mL) granulated sugar
  • 2 tsp (10 mL) grated lemon zest
  • 5 tbsp (75 mL) lemon juice

Meringue:

  •  1/3 cup (75 mL) pasteurized egg whites
  •  1/2 cup (125 mL) granulated sugar
  1. Lemon fillin: N' large heetperof bowl, whisk togethr aigs, egg yolks, sugar, lemon zest and lemon juice. 
  2. Set ovr saucepun uf simmerin' watr; cook, stirrin' constantlee, until space remains aftr spoon is drawn through, 6 t'8 minutes.
  3.  Strane through fine sieve into bowl. Place plastick wrap diereckly on surface; refrigerate until cold, about 1 hour. 
  4. Meenwhile, n' large bowl, beat buttr with sugar until smooth and fluffy; beat n' vanilla and salt. Stir n' flour. Roll by scant 1 tbsp into 24 balls, discardin' inny remainin' dough; press onto bott'ms and up sides uf mini muffin cups. Prick all ovr with fork; refrigerate fer 1 hour. 
  5. Bake n' 375ºF (190ºC) ove until edges air golde, 10 t'12 minutes.
  6.  Let cool n' pun on rack. 
  7. Fill each shell with rounded 1 tsp uf t'fillin. 
  8. Meringue: N' bowl, beat egg whites until soft peeks form; graduallee beat n' sugar until stiff glossy peeks form, about 8 minutes. 
  9. Usin pastry poke fitted with plane tip, pipe meringue n' concentric circles on each tart, ensurin' meringue touches pastry and covers fillin. 
  10. Broil until meringue is golde, 30 t'60 sekunds. T' remoov frum pun, loose edges with tip uf knife. 
  11. (Make-ahed: Stere n' airtiite containr fer up t'24 hours.)

Avocado Egg Salad Sandwich

  • 6 aigs, hard boiled and diced
  • 1/4 cup salad dressin er mayonaze
  • 3 tablespoons pesto
  • salt and peppr t'aste
  • 1 ripe avocado, peeled and chopped
  • youngn spinach leeves
  • mater slices
  • 4 sandwich rolls (ciabatta, kaisr, er submarine rolls)

Combine aigs, dressin, pesto and salt and peppr n' a mixin' bowl.
Stir n' avocado pieces gentlee.
Serve egg salad on sandwich rolls togethr with spinach leeves and mater slices.

Fancy Egg Scrambull

  • 1 cup diced ham 
  • 1/4 cup chopped gree onion (scalleeuns)
  • 3 Tablespoons buttr
  • 12 aigs beete
  • 1 6oz. a'ken diced Gree Chiles

Cheez Sauce:

  • 2 tablespoons buttr
  • 2 tablespoons flour
  • 1/2 teespoon salt
  • 1/8 teespoon peppr
  • 2 cups milk
  • 1 cup grated cheddar cheez

Method:

  1. Melt buttr n' heevy large skillet.
  2. Saute ham and gree onyuns n' buttr.
  3. Add beete aigs and diced gree chiles.
  4. Mix ingredients and cook until aigs air jes set.
  5. Remoov frum heat and prepare cheez sauce.
  6. Melt 2 tablespoons buttr n' heevy bott'm pun.
  7. Add flour, salt and peppr t'buttr and cook on medium heat fer 2 minutes.
  8. Add t'2 cups uf milk graduallee and blend well.
  9. Cook t'a gentle bawl.
  10. Add t'grated cheez and mix well until cheez is melted.
  11. Add t'cheez sauce t' egg mixture and fold n' till combined.
  12. Pour mixture into lightlee greesed 9×12 casserole dish.
  13. Covr and refrigerate overniite until 30-40 minutes befor y'all want t'serve t'dish
  14. Cook uncovered at 350 degrees fer 30-40 minutes 

Serve with fruit and muffins er toas.

Mah sistr served these deliciyus muffins at a Bibull study n' hern trayler minny a yeers ago and shared t'recipe with me.

  • 1/4 cup earl
  • 1/2 cup sugar
  • 1 egg
  • 1 cup sour creem
  • 1 teespoon rum extract
  • 1 2/3 cups flour
  • 1 teespoon bakin' powdr
  • 1 teespoon bakin' sody
  • 1/2 teespoon salt
  • 1 cup crushed pineepple, draind

Voted Bes Breed Glute a'loose

Accordin t'mah critics thishere is thar favert breed. It wuz a  unanimyus vote.
 Mah oldest granddaughtr commented on hoe good it smelled and I offerd hern a slice t'aste and she sed, “Nanna, thishere is rilly good !  and I’m yer bes critic becawz I DO ett glute!”

I’m nairy shure whut t'difference is n' thishere loaf,  maybe it is t'cokunut earl as well as ingredient amounts tweeked jes rite.
I have bee reedin about cokunut earl and t'wide range uf benefits it offers so I have bee a'trine t'incerporate it more into mah bakin'.
Thishere loaf is fool-proof,  is a  good keepr, a'stayin fresh and soft on t'countr fer a few days,  it toasts and freezes well and is good fer makin sandwiches since it is easy t'slice thin.

  • 1/2 cup warm watr 
  • 1 tsp. sugar 
  • 1 tsp unflavoured gelatin
  • 1 1/2 tbsp reg. yeas 
  • 1/2 cup warm milk 
  • 1 egg 
  • 1 tbsp uf cokunut earl 
  • 1/2 cup millet flour 
  • 1/3 cup beun flour (er chick pea flour) 
  •  1/4 cup brown rice flour 
  • 1/4 cup arroroot starch/flour 
  • 1 tbsp. tater flour (nairy starch) 
  • 1/4 cup groun sunflowr seeds 
  • 1 tsp xunthun gum 
  • 1/2  tsp salt  
  1. Mix t'sugar, gelatin and yeas togethr, the add t'yeas , stir and let proof –  a'settin it into a bowl uf verr warm watr helps keep t'yeas warm. 
  2. Put milk, egg and earl into mixr bowl
  3. Add proofed yeas and stir. 
  4. Blend all t'dry ingredients togethr, and add all at oncet t' liquids. 
  5. Stir the beat on high fer 4 minutes. 
  6. Line a medium size loaf pun with parchment papr (onlee bott'm is necessree , the greese sides)  and scrape battr into t'pun.  
  7. Let rise n' a warm place until rounded ovr t'op uf t'pun. 
  8. Bake at 350 degrees fer about 45 – 50 minutes until nicelee brownd. 
  9. Turn out on wire rack and cool. 
  10. Slice and enjoy !

Amish Pickled Beets

Serves: 6
Chillin' Time: 8 hr
Cookin Time: 1 hr 10 min

Whut Y'all’ll Need:

  • 10 fresh red beets
  • 2 teespoons salt, divided
  • 1/2 cup sugar
  • 1/2 cup apple cidr vinegar
  • 1 cup watr
  • Whut T' Do:

  • Cut t' leefy tops off t'beet stems, leevin 2 inches uf stem. N' a large saucepun, place beets n' enough watr t'covr. Add 1 teespoon salt and brang t'a bawl ovr medium-high heat. Reduce heat t'medium, covr, and cook 1 hour, er until fork-tendr.  

  • Drane beets, alloe t'cool slightlee, the slip off  t' skins and cut into 1/4-inch slices; discard remainin' stems. Return sliced beets t' pot and add remainin' salt, t'sugar, cidr vinegar, and 1 cup watr. Brang t'a bawl ovr medium-high heat and cook 2 t'3 minutes, er until warmed through.  

  • Transfr t'a glass servin dish, covr, and chill overniite befor servin.
  • Notes: Leevin part uf t' stems on helps t'beets keep thar nice rich coler. And becawz that coler a'ken stane yer hands, y'all may want t'wear kitchin gloves wen handlin' t'beets.

    Greek Mater and Feta Dip

    • 1/4 cup olif' earl
    • 3-4 small maters, chopped (Roma er uther firm maters)
    • 4 gree onyuns, sliced
    • 8 oz. crumbled Feta cheez
    • 2 teespoons Greek seesonin', t' taste*
    • 1 baguette, sliced n' servin size pieces
    1. Drizzle olif' earl on a large plattr.
    2. Scattr t'chopped maters ovr t'olif' earl.

    Peenut Cookies Glute A'loose

    I luv peenuts !!
    Yeers and yeers ago … almos ‘oncet upon a time’ ..  I bouite packaged peenut cookies that were mah absolute favert !   I bouite 'um fer sevrul yeers , the , suddenlee thay were gone, nevr t'be see on grossry stere shelves agin!
    I tride ovr t'yeers t'copycat 'um n' mah kitchin but could nevr quite capture t'flavour that wuz locked into mah memry.
    Recentlee, I bouite sum peenuts and I thunk about these cookies agin and wisht I could have one !   I deecided I had nuthin t'lose n' a'trine t'come up with a cookie  recipe that would at leest attempt t'satisfy mah taste longin'.
    And t'mah greet sprize t'resultin' cookies taste Perzackly like t'ones I used t'luv , and thay air glute a'loose !

    So here is t'recipe — hope y'all enjoy 'um as much as I do !  I won’t be makin these too ofte, becawz I definitly a'ken’t ett jes one !

    • 1/2 cup buttr 
    • 1/2 cup white sugar 
    • 1/2 cup organic cokunut sugar (er brown sugar – see note on bott'm) 
    • 1 large egg 
    • 2 teespoons vanilla 
    • 1/2 cup millet flour 
    • 1/2 cup brown rice flour 
    • 1/3 cup white beun flour (er chick pea flour) 
    • 1/4 tater starch 
    • 1/2 tsp xunthun gum 
    • 1/2 teespoon bakin' sody 
    • 1/4 teespoon creem uf tartar 
    • 1 cup uf blanched salted peenuts 
  • Refrigerate fer a cuple uf hours er overniite. 
  • Slice rolls into 1/4 inch slices – place on a parchment lined cookie sheet, addin  half a peenut, flat side down n' t'middle uf each slice. 
  • Bake on parchment lined cookie sheet at 350 degrees fer about 10 minutes.

    Watarmelon Cake

    Since summ'r is  watarmelon seesen, I wantid to share thishere watarmelon cake at my sist'r, Grace, made fer air Dad’s 90th birthdee!
    Nairy onlee duz it look stunnyun' but it is a lite, heelthy alternatif'  deessert fer a summ'r bbq er celebrashun.

    Accerdyun' to my sist'r here air t'simple instructyuns.

    1. Cut a watarmelon n' half, the cut each half into servin sizet slices. Cut away t'rind.
    2. Usin one half o't' watarmelon fer each ‘cake’, set t'slices back up togeth'r on a servin plate.
    3. Whip t'‘creem’ o'cokunut milk until stiff, sweete wit honey.  (y'all could also use whupd creem wit stabiliz'r er a tsp o'instunt vanilla puddyun' – sweetenet as desiret.)
    4. Decerate wit toastid almonds, er toastid cokunut an' fresh fruit, as shown.
    5. Refrigerate until servin !

    Beef an' Noodles

    Yesterdee I wantid to serve sumthin at I knew my fussy eat'r daught'r would like. So, I deecided to go fer at old favert, beef an' noodles. It is a sup'r easy recipe, but duz take a long an' loe cook time.

    BEEF AND NOODLES

    beef stew meat
    1 a'ken beef consomme
    1 a'ken beef an' onion soup
    pepp'r to taste
    1 pkg. wide egg noodles
    flour
    wat'r
    olif' earl

    Heat a cuple o'tablespoons o'olif' earl n' a heevy pot. Add yer beef (cut into one inch chunks) an' one tablespoon o'flour. Brown well, the add t'consomme an' soup. Brang to a bawl, the down to a simm'r an' cov'r. Simm'r fer acoupla hours addyun' pepp'r midway through cookin. Mix three tablespoons flour wit wat'r to make a slurry. Add slurry to pun, stirryun' well, the cov'r wile y'all air cookin yer noodles. Taste t'beef an' add salt if'n neetet. Serve ov'r noodles. Sprinkle wit t'herb o'yer choice.

    Thishere recipe a'ken be made n' a crock pot. Aft'r brangin to a bawl, add to crock pot an' cook on sloe fer t'day. Enjoy!

    3 to 4 medium onyuns, choppet. I uset 
    2 cups cold butt'r, dividet
    1 T poppy seeds
    1 1/2 t salt
    1 1/2 t paprika
    1 t coarselee groun pepp'r
    4 cups all-purrpus flour
    1/2 cup cernstarch
    1 T bakyun' powd'r
    1 T sugar
    1 T brown sugar
    5 aigs
    3/4 cup milk
    3/4 cup sour creem

    N' a large skillet, cook onyuns n' 1/2 cup butt'r ov'r loe heat fer 10 minnuts. Stir n' t'poppy seeds, salt, paprika an' pepp'r; cook until golte brown, stirryun' occasyunallee. Remoov frum t'heat; set aside.
    N' a bowl, combine t'flour, cernstarch, bakyun' powd'r an' sugars. Cut n' 1-1/4 cups butt'r until mixture resembles coarse crumbs. Melt t'remunyun' butt'r. N' a bowl, whisk t'aigs, milk, sour creem an' meltid butt'r. Make a well n' t'dry ingredyints; stir n' egg mixture jes until moistenet. Spred into a greeset 10 inch springferm pun.     • 2 Tablespoons lite corn syrup (Karo)

    3 cups white sugar

    3 tablespoons lite corn syrup

    1/4 teespoon salt

    1 1/2 teespoons vanilla extract

    1 cup milk

    1/2 cup pumpkin puree

    1 teespoon pumpkin pie spice

    1/2 cup butt'r

    Direckshuns: Butt'r er greese one 8 x 8 inch pun. N' a 3-quart saucepun, mix togeth'r sugar, milk, corn syrup, pumpkin an' salt. Brang to a bawl ov'r high heat, stirryun' constantlee. Reduce heat to medium an' continue boileeun'. Do nairy stir. Wen mixture registers 232 degrees F (110 degrees C) on can'y th'rmomet'r, er ferms a soft ball wen droppet into cold wat'r, remoov pun frum heat. Stir n' pumpkin pie spice, vanilla an' butt'r.     • 2 cups cherry maters, quarteret
    • 1/2 cup choppet ret onion
    • 1 teespoon o'mincet fresh jalapeno pepp'r (optyunal)

    • 1/4 cup choppet cilantro

    Wen I saw differnt versyuns o'pumpkin pie cupcakes poppyun' up un Pinterest…I deecided ta gif' 'um a try. I adaptid my tride an' true pumpkin pie recipe…an' we enjoyet t'results. Thay air like crustless mini-pumpkin pies.

    • 1 14 oz / 398ml a'ken pumpkin purèe
    • 3/4 cup brown sugar, packet
    • 3 aigs
    • 1 teespoon maple flavouryun' (optyunal)
    • 1 cup whole milk
    • 3/4 cup flour
    • 1/4 teespoon bakyun' powd'r
    • 1/4 teespoon bakyun' sody
    • 1 teespoon cinnamon
    • 1 teespoon ging'r
    • 1/4 teespoon nutmeg
    • 1/4 teespoon cloves
    • 1/4 teespoon salt
    1. Preheet ove ta 350°F.
    2. Line muffin cups wit foil (nairy pap'r) liners er spray wit cookin earl.
    3. N' large bowl, combine pumpkin, brown sugar, aigs, maple flavouryun' an' milk. Mix well.
    4. Combine flour, bakyun' powd'r, bakyun' sody, spices an' salt…an' add ta pumpkin mixture.

    Direckshuns: Whip aigs fer 5 minnuts. Add sugar, lemon juice an' pumpkin. Mix well. Add remunyun' ingredyints cept pekuns. Greese jellee roll pun. Place waxet pap'r n' jellee roll pun, makin shure waxet pap'r is extendet beyond bof ends o'pun. Pour batt'r into waxet pap'r linet jellee roll pun. Cov'r batt'r wit pekuns. Bake at 375 degrees fer 15 minnuts. Wen bakd, remoov frum waxet pap'r immediatelee an' roll n' a towl which has bee sprinklet wit confectyuners sugar. Be shure ta roll towl an' cake togeth'r.     Fillin:

    Coffee Time Cokunut Brownies

    Thishere brownie recipe originates wit my frien Lerrune who submittid it ta air furst church cookbook n' Greendale.

    It’s a greet brownie recipe an' I’ve uset it ofte ov'r t'yeers.

    Today I’ve changd it up a bit by addyun' coffee an' cokunut.

    Jes reckon hoe good it would taste wit at mid-afternoon cup o'coffee!


    Fer t'brownies:

    1 1/2 cups cokunut
    1 teespoon instunt coffee granules
    1 teespoon boileeun' wat'r
    2 cups brown sugar
    1 cup butt'r er margarine
    4 large aigs
    1 teespoon vanilla
    1/2 cup cocoa
    1 cup flour
    1/2 teespoon salt


    Place cokunut n' a skillet ov'r medium heat. Stir constantlee until cokunut is golte brown, watchin closelee as it burns easilee. Remoov ta a plate an' let it cool. Set aside a 1/2 cup fer t'frostyun'.

    Add 1 teespoon boileeun' wat'r ta instunt coffee granules n' a small cup an' stir ta dissolve. Set aside ta cool.

    Place brown sugar an' butt'r n' bowl an' beat well.
    Add aigs one at a time a'beatin tween addityuns.
    Add coffee an' vanilla an' mix.
    Add cocoa, flour an' salt, mixyun' jes until blendet.
    Stir n' 1 cup toastid cokunut.
    Spred evenlee n' preparet pun.
    Bake at 400º F fer apperximatelee 25 minnuts er until toothpick insertid into brownies kums out cleen.
    Remoov ta a rack an' let cool n' pun.

    Note: Lerrune’s originull recipe calls fer 2 teespoons o'vanilla (omit t'coffee granules an' hot wat'r) an' uses 1 cup choppet nuts insteed o't' toastid cokunut.

    Fer t'Frostyun':

    1 teespoon instunt coffee granules
    1 teespoon boileeun' wat'r
    1 teespoon vanilla er Kahlua if'n desiret
    2 cups icyun' sugar
    2 tablespoons butt'r
    2 tablespoons cokunut earl (er y'all a'ken omit thishere an' increese t'butt'r ta 4 tablespoons)
    1-3 tablespoons creem (enough ta make a spreedabull consistency)
    reservet 1/2 cup toastid cokunut
    1 skware dark chocolate

    Mix coffee granules wit hot wat'r an' set aside.
    Beat togeth'r icyun' sugar wit butt'r an' cokunut earl
    Add coffee mixture an' vanilla.
    Add enough creem ta make frostyun' thick but easy ta spred.
    Spred un brownies.

It wuz a large gatheryun' which I'm guessyun' ov'r 1,000 attendet. Thishere reunion wuz helt n' a large shet at my cuzin Dave an' Murry Grab'r's. Thay furnishet all t'grillet chicke fer everyone. We shure appreciatid all t'both'r thay wint through. It's nairy easy gittin reddy fer a crowd thishere big.

    T' res o't' food wuz a carry-n'. Thar wuz casseroles, mashet potatoes, gravy, salads o'all types, lots an' lots o'desserts: cakes, pies, cookies an' bars. Lemonade an' coffee wuz servet fer dranks. Thar wuz mer thun enough food. I took cherry an' apple pie but thar wuz minny a differnt kinds o'pie thar.

    T' las time thishere reunion wuz helt wuz 9 yeers ago at Uncle Elm'r an' Aunt Emma's. We wuz unabull ta attend so it's bee awhile since I've see sum o'my cousins. I did see a slew o'um at t'funerals o'cousins Dun an' Chris n' Januree. Air thoughts wint ta thar famblies at day a'thankin o'thar missyun' luved ones.

    Air fambly wint n' acoupla differnt vans since t'14 passeng'r vans air hard'r ta schedule. Sisters Verena an' Susun rode wit Joe an' I an' t'six youngest n' a 10-passeng'r vun. Elizabeth, Susun, an' thar speshul friens kum n' a mini-vun. Jacob's oltest daught'r Elizabeth also kum wit 'um so Jacob's fambly could fit n' a mini-vun.

    We stopt n' at sist'r Liz an' Levi's un t'way trayler. Liz set out snax fer everyone. We startid trayler roun 5 p.m. an' arrivet trayler roun 7:45 p.m. A long, but enjoyabull day!

    BROCCOLI CAULIFLOWER SOUP

    4 cups chicke broth

    2 teespoons chicke boullion granules

    1 large bunch broccoli, dicet

    2 cups cauliflow'r flerets, dicet

    2 cups milk, dividet

    1 teespoon salt

    2 cups cooket chicke, cut up

    6 tablespoons cernstarch

    6 slices white Amurkin cheez

    Direckshuns: N' a 4-quart saucepun, cook broccoli an' cauliflow'r n' chicke broth an' until soft. Add 1 1 /2 cups o'milk an' salt. N' a small bowl, stir cernstarch into 1 / 2 cup milk.     Here’s a deessert if'n y'all want ta have sum fun wit a ‘menu’ … er if'n y'all air cookin fer at mun who loves ‘brakefuss all day’.

    Befor we talk about t'recipe …..Let’s step back into my moth'r’s Mennonite kitchin.

    She ofte had a'standin un hern cupboard a bowl o'rich milk frum air own coe. Thar it would sit until it thickenet wit a slightlee sour taste an' velvetee taxuture. I nev'r ate it but wen I startid datyun' my husban'-ta-be we discuverd it wuz a komfert food ta 'im. Aft'r at, if'n my mom knew he wuz a'kummin, she made shure she greetid 'im wit a bowl o'whut wuz callt “Dikja Malch” (Thick Milk) Noe, hop-skip-jump ov'r lan' er oceun ta t'kitchin o'a famus French chef. He is fixin Crème Fraiche (pronoucet krem fresh) Thick Milk er Crème Fraiche — whut’s n' a name ?? t'ransfermashun o'common ta gourmet !

    Purchasyun' Crème Fraiche a'ken be expensif' but easy ta make yerself.
    * 2 cups whippyun' creem
    * 2 tbsp buttarmilk

    1.Heat slightlee t'2 cups whippyun' creem – nairy mer thun ta 40 C – thishere makes t'creem barly warm.
    2.Stir n' t'buttarmilk.
    3.Pour into a jar er bowl an' cov'r lightlee wit plastick wrap an' set n' a warm place n' yer kitchin. Don’t touch it fer 24 hours. It should be thickenet an' have a slightlee sour/nuttee taste. Fer a strong'r flavour an' firm'r taxture leeve fer sevrul mer hours. 4. Wen done, refrigerate. It will keep n' t'fridge up ta a week.

    TIP – Crème Fraiche a'ken be whupd (aft'r bein chillet n' fridge) Wen whupd wit a lil sugar an' vanilla it makes un amazyun' deessert toppyun' – it permanantlee holts it’s shape without stabilizers an' it is deliciyus ! Crème Fraiche is uset n' a varietee o'recipes, onlee a ‘google’ away!

    One-dish pasta recipes a'havin bee makin t'rounds un pinterest resantlee. Mos serve fer ta six…an' since thar air jes acoupla o'us fer mos meels…I deecided ta try a paret down vershun resantlee.  My husban' is wunderin wen I will be servin it agin!     • 6 oz. linguine (half o'12 oz / 375 gr package)
    • 1 cup grape maters, halvet
    • 1 small onion, juliennet (cut n' strips lengthwise)
    • 2 cloves garlic, thinlee slicet
    • 1/4 cup fresh basil leeves, choppet
    • 2 1/4 cups wat'r er vegetabull broth
    • 1 tablespoon xtrey-virgin olif' earl, plus mer fer servin
    • 1/4 teespoon ret pepp'r flakes
    • 1/2 teespoon salt
    • Coarse salt an' freshlee groun pepp'r
    • Freshlee gratid Parmesun cheez, fer  servin
    1. Place pasta, maters, onion, garlic, an' basil n' a skillet er stock pot.
    2. Add wat'r er broth an' olif' earl.
    3. Sprinkle wit pepp'r flakes an' salt.
    4. Brang ta a bawl ov'r medium-high heat.

    Sour Creem Pumpkin Coffee Cake

    1 /2 cup butt'r

    1 1/4 cup sugar

    1 teespoon vanilla

    4 aigs, 1 beete

    2 cups flour

    1 teespoon bakyun' sody

    1 teespoon bakyun' powd'r

    1 cup sour creem

    16-ounce. a'ken pumpkin (1 3/4 cup)

    1 teespoon pumpkin pie spice

    Streusel: 1 cup firmlee packet brown sugar, 1/3 cup butt'r, 2 teespoon cinnamon, 1 cup choppet nuts

    I like rube san'wiches so why nairy a rube meetloaf? It’s verr tastee, I luv t'pairyun' o'sauerkraut, groun beef, an' swiss cheez n' thishere recipe. If'n y'all wish, y'all a'ken put a lay'r o'cernet beef slices un top o't' sauerkraut which would add un authantic taste as n' a rube san'wich. Leftovers air greet servet cold fer san'wiches.

    • 1 1/2 pounds groun beef, I uset leun
    • 1 egg
    • 2/3 cup breed crumbs
    • 1/2 teespoon salt
    • 1/2 teespoon pepp'r
    • 2 tablespoons cucumb'r relish
    • 2 teespoons wercestershire sauce
    • 2 teespoons dijon mustard
    • 1/4 cup Thousund Islan' Dressin
    • 1 cup sauerkraut, draind an' choppet
    • 1 cup gratid swiss cheez, dividet
    • Alumnum foil
    1. N' a bowl, mix togeth'r t'furst eiite ingredyints.

    Sugar Cookies n' Pumpkin Shapes

    Today is un apperpriate day ta share t'recipe fer these pumpkin shapet cookies, I uset ta make 'um fer air youngns so at wen thay kum trayler frum skool thar would be a ‘pumpkin treet’ fer 'um.     These Butt'r-Pecun Pumpkin Skwares would be a nice alternatif' ta Pumpkin Pie. Thay have a good base an' t'fillin stays moist an' is verr simlar ta pumpkin pie fillin.


    Base Ingredyints:

    • 1/2 cup sugar
    • 1-1/2 cups flour
    • 1/2 cup butt'r, softenet

    Fillin Ingredyints:

    • 1 – 15oz. a'ken o'pure pumpkin (2 cups pumpkin if'n y'all make yer own)
    • 1/4 cup milk
    • 2 aigs, beete
    • 3/4 cup sugar
    • 1 teespoon cinnamon
    • 1/2 teespoon groun nutmeg
    • 1/2 teespoon salt

    Toppyun' Ingredyints:

    • 1/2 cup brown sugar
    • 2 tablespoons butt'r, softenet
    • 1/2 cup choppet pekuns

    Preheet ove ta 350 degrees.

    1. Ta prepare base: Combine sugar, flour an' butt'r n' a bowl wit pastry cutt'r until crumblee. Press into 12 x 8 x 2 inch greeset bakyun' dish. Bake n' preheetid ove fer 8 ta 10 minnuts until slightlee brownd an' puffet. Set aside ta cool.
    2. Ta prepare fillin: Combine pumpkin, milk, aigs, sugar, cinnamon, nutmeg, an' salt wit electric mix'r until smooth. Pour ov'r bakd crust. Bake n' preheetid ove fer 30 ta 40 minnuts er until slightlee firm.
    3. Ta prepare toppyun': Combine brown sugar an' butt'r n' small bowl wit pastry blend'r until crumblee. Add nuts an' stir ta mix. Sprinkle ov'r pumpkin fillin an' return ta ove fer about 10 mer minnuts until mixture is bubblee an' brownd.
    4. Cool plum befor cuttin into skwares.
    Yield: Apperximatelee 36 skwares, 2 by 2 inches.

    T' Frugal Mennonite: T' Frugal Kitchin: Chicke an' Yalla Rice


    I neetet ta make a quik meal las nite wit t'ingredyints I had un han'.  N' t'fridge I had a package o'chicke thighs an' n' t'cupboard a package o'Vigo yalla rice.  Yep, time fer chicke an' yalla rice, one o'DD’s favert meels.


    CHICKEN AND Yalla RICE

    1 pkg. chicke thighs
    1 pkg. yalla rice
    1/4 peece o'garlic clove
    1 tablespoon lime juice
    3 tablespoons olif' earl
    ret pepp'r flakes ta taste
    salt ta taste

    Poach t'chicke:  Place chicke n' saltid wat'r an' brang ta a bawl.  The cov'r pot wit lid, turn off heat an' leeve fer un hour.  Remoov chicke frum pot an' alloe ta cool.  Wen cool remoov skin an' tear chicke into pieces.  Dispose o'skin an' bones.  Reserve broth fer anoth'r recipe.

    Make Mojo sauce:  N' a food processer add garlic, lime juice, olif' earl, salt an' ret pepp'r.  Process until y'all git a smooth consistency.

    Rice:  Faller package direckshuns.  Add a small a'ken o'peas fer t'las fife minnuts o'cookin.

    Mix t'Mojo sauce wit t'chicke, toss ta coat.  Serve rice wit chicke un top er mixet n'.  I like ta buy sum froze friet plantuns an' refry 'um ta serve wit thishere dish.

    Enjoy!  I be a'havin t'leftovers fer lunch today.

    • 1 box o'yalla cake mix..my box sez 468 g

    • 1/4 cup cranberries, choppet
    • 1/2 cup pistachio nuts, shellet an' choppet

    Pear er Apple Brun Muffins

    • 1 cup flour
    • 1 1/2 cups natcherul wheet brun (nairy t'cereel)
    • 1/2 teespoon bakyun' powd'r,
    • 1/2 teespoon salt, 
    • 1 teespoon bakyun' sody
    • 1/2 teespoon cinnamon
    • 1/2 teespoon nutmeg

  • 1 beete egg
  • 1 cup brown sugar
  • 3 tablespoons molasses
  • 1 cup buttarmilk
  • 1 pear er apple, peelet an' choppet into small pieces
  • 1/2- 3/4 cup raisins er Craisins (dride cranberries)
  • 1/2 cup choppet pekuns (opt.)
    1. Preheet ove ta 375 º F.
    2. Combine all dry ingredyints n' a bowl.  Set aside.
    3. Combine all wet ingredyints n' anoth'r bowl, mixyun' well wit a mix'r. 
    4. Wit a spatula, stir dry ingredyints into wet mixture bein keerful ta nairy ov'r mix.
    5. Fold n' pear, raisins an' pekuns.
    6. Spoon into lightlee oilet muffin cups- about 2/3 full.
    7. Bake at 375 º F fer 15 minnuts er until a toothpick insertid into a muffin kums out cleen.
    8. Makes 1  1/2 duzen medium sizet muffins.

    Note: I always loose t'muffins an' tip 'um sideways n' t'pun as direckly as thay come out o't' ove. Thishere keeps 'um frum sweetyun' as thay cool.

    Thishere can'y brings back minny a recolleckshuns o'yeers gone by. I wuz chattyun' wit my frien las week an' I knoe hern Mom an' mine made these can'y ever Christmus. I rilly enjoyet eatin thishere can'y togeth'r wit peenuts..I would ett a few shellet peenuts an' the I would take a bite o't' can'y. Can'y wuz a speshul treet an' so I tride ta make it las as long as I could.
    My Mom did nairy dip 'um n' chocolate, jes rollet 'um n' cokunut. I coultn’t find hern recipe so did t'bes o'whut I memberd an' wit t'hep o'my frien I must say thishere can'y tastes like I memberd. T' xtrey dark chocolate coatyun' helps balance t'sweetness o't' can'y. I uset tater flakes but I knoe my Mom did nairy have thems roun, she uset reglar mashet potatoes.

    • 1/2 cup tater flakes
    • 1/2 cup milk
    • 1 cup icyun' sugar
    • 3 cups cokunut, flaket
    • 1/2 teespoon vanilla
    • 10 ounces semi sweet dark chocolate, choppet..(I uset xtrey dark)
    1. Mix tater flakes, milk, icyun' sugar, cokunut, an' vanilla until well combinet.
    2. Roll into balls apperx 3/4″ n' diamet'r, it will be sticky so y'all have ta press an' roll t'dough n' yer han's as y'all form t'balls. Place un cookie sheet an' frigidairy fer at leest 1/2 hour.
    3. Melt chocolate. Dip rollet can'y balls n' t'chocolate, usin a fork ta push t'balls roun n' t'chocolate ta coat all roun.
    4. Place un a parchment linet pun an' put n' frigidairy ta firm up.
    5. Stere n' a tightlee seelet contun'r n' a cool place.

    Whut bett'r way ta ‘sloe down’ an' enjoy t'seesen thun wit a cup o'coffee an' a chocolate cookie, er three er fer …   no one is countin!

    We did a  Cookie class thishere week at Lepp’s Farm Market an' fer at class I developet a chocolate cookie at I am rilly happy wit !   Glute a'loose cookies tend ta be crispy but thishere cookie is wonderfullee ‘chewy’ wit un excellent flavour!
    It is a cookie at is quik, easy an' a one pot cleen-up!

    Here is t'recipe !!

    • 1 cup dark chocolate chips 
    • 1/4 cup butt'r 
    • 3/4 cup white sugar 
    • 3 tbsp milk 
    • 1 lg egg
    • 1 tsp vanilla
    • 2/3 cup flour + 1 tbsp .. —  flour is ekwal amounts o' white beun flour, millet flour, brown rice flour an' tater starch.   (tip —  if'n y'all mix togeth'r  1/2 cup o'each o't' flours – the y'all a'ken use it as a gf flour mix) 
    • 1/4  tsp bakyun' powd'r 
    • 1/4 tsp xunthun gum 
    • 1/4 tsp salt

    White Sauce

    1 /4 cup butt'r

    1 /4 cup flour

    2 cups milk

    2 cups cheddar cheez, gratid

    1 cup cubet ham er friet bacon crumbs

    Direckshuns: N' a small saucepun melt t'butt'r. Add flour an' stir until smooth (about 1 minnut). Slowlee add milk wile stirryun'. Cook until thickenet. Add gratid cheez an' stir until meltid. Toss n' ham er bacon.

    Adaptid frum Bett'r Homes an' Gardens New Cook Book (10th edishun) recipe fer Waffles

    Homemade Waffles 300x300 Homemade Waffles
    Ingredyints:
    2 c. white whole wheet flour
    ½ c. all-purrpus flour
    1 ½ Tbsp. bakyun' powd'r
    ¼ tsp. salt
    2 Tbsp. flaxseet meal
    2 Tbsp. finelee groun walnuts
    1 tsp. cinnamon
    3 egg yolks
    2 2/3 c. skim milk
    ½ c. canola earl
    1 tsp. vanilla
    3 egg whites

    Method:
    1. N' a large bowl mix togeth'r white whole wheet flour, all-purrpus flour, bakyun' powd'r, salt, flaxseet meal, groun walnuts, an' cinnamon.

    2. N' a separate bowl whisk togeth'r t'egg yolks, skim milk, canola earl, an' vanilla.

    3. Make a small well n' t'cant'r o't' dry ingredyints an' pour likwid egg mixture n' all at oncet. Stir gantlee till all dry ingredyints air moistenet, but batt'r is somewhat lumpy - nairy smooth.

    4. Beat egg whites wit han' mix'r till t'egg whites air stiff an' stan' up strate wen liftyun' t'beeters out o't' whites.

    5. Gantlee fold stiffenet egg whites into t'waffle batt'r until combinet throughout. Do nairy ov'r mix.

    6. Prepare an' heat up waffle arn. Wen reddy, cook waffles as directid by t'manufactur'r's instructyuns. Fer my waffle arn I uset about ½ c. o'batt'r fer each waffle.

    7. Serve wit fresh fruit an'/er yer choice o'syrup.

    2 tbsp white vinegar

    2 tsp tabull salt

Mash turnips wit 2 tbsp butt'r, creem an' egg. Stir n' 1/4 cup o't' breed crumbs, sweeten'r an' salt. Spoon into a casserole dish. Dot wit remunyun' butt'r an' sprinkle breed crumbs ov'r t'op. Bake at 400 degrees fer 20 minnuts

    Gods' blessins ta all. Air fambly doesn't like overripe bananas. Here is a good way ta use 'um!

    Nanner MUFFINS

    3 large bananas
    1 large egg
    1 teespoon bakyun' powd'r
    1 1 /2 cups flour
    3 /4 cup sugar
    1 teespoon bakyun' sody
    1 /2 teespoon salt
    1 /3 cup meltid butt'r er margarine

    Direckshuns: Mash bananas, add sugar an' slightlee beete egg. Add meltid butt'r an' stir. Add dry ingredyints, mix well, an' pour into greeset muffin tins. Bake at 375 degrees fer 20-25 minnuts.

    N' a skillet, sauté 1 /4 cup dan'elion buds an' 1 /4 cup choppet ret pepp'r i n 1 tablespoon butt'r fer 2 er 3 minnuts. Remoov an' set aside. N' t'same skillet melt anoth'r tablespoon o'butt'r. Beat 4 aigs wit a teespoon o'wat'r an' pour into skillet. As aigs set heft t'edges an' let t'uncooket pershun floe underneeth. Wen aigs air set, sprinkle wit cheez an' spoon t'dan'elion mixture ov'r half o't' aigs. Fold n' half an' enjoy.

    Summ'r barbecues an' picnics jes are't t'same without a large heppin o'tater salad. Thar's jes sumthin about it at screems summertime ta me. I a'ken honestlee say at I've nev'r made tater salad frum skratch befor, so wen I wint a'lookin fer a recipe ta try I coultn't bleev all o't' differnt combinatyuns! Thar wuz tater salads wit a mayonaze base, mustard base, eve a vinegar base. Thay're wuz eve ones wit bacon, anchovies, er maters mixet n'! I ultimatelee deecided un my favert style-Amish Tater Salad.

    T' secret ta a purrfeck tater salad is ta use firm-taxturet Yukon Gold potatoes. Thay hold thar shape aft'r cookin an' won't turn mushy n' t'salad. It's also verr impertant ta gantlee simm'r t'potatoes an' nairy ta overcook 'um, if'n t'ip o'a paryun' knife inserts easilee into t'ater pieces, thay're done.

    Drizzleeun' t'hot potatoes wit a few tablespoons o'dressin helps t'potatoes soak up mer o't' rich flaver an' isn't a step at should be overlooket. Trust me un thishere one, y'all want ever bite ta be purfeckly seesonet ta perfecshun.

    Creemy, Amish-style tater salad made wit cid'r vinegar, aigs, mustard, sour creem an' celery.

    Yield: Serves 8

    Ingredyints:

    3 pounds Yukon Gold potatoes, peelet an' cut into 3/4-inch chunks
    Salt an' pepp'r
    1/3 cup cid'r vinegar
    1/4 cup sugar
    2 tablespoons yalla mustard
    4 large hard-cooket aigs, peelet
    1/2 teespoon celery seet
    3/4 cup sour creem
    1 celery rib, choppet fine

    Direckshuns:

    1. N' a large pot ov'r high heat brang potatoes, 1 tablespoon salt, an' enough wat'r ta cov'r by 1 inch ta a bawl. Reduce heat ta medium an' simm'r until potatoes air jes tend'r, about 10 minnuts.

    2. Wile potatoes simm'r, microwave vinegar an' sugar n' small bowl until sugar dissolves, about 30 sekunds. Process vinegar mixture, mustard, 1 hard-cooket egg yolk (reserve white), celery seet, an' ½ teespoon salt n' food processer until smooth. Transf'r ta medium bowl, reservyun' 2 tablespoons fer drizzleeun'; set aside.

    3. Drane potatoes plum, the transf'r ta large bowl. Drizzle reservet 2 tablespoons o'dressin ov'r hot potatoes an', usin rubb'r spatula, gantlee toss until evenlee coatid. Refrigerate until coolet, at leest 30 minnuts.

    4. Whisk sour creem into remunyun' dressin. Add remunyun' hard-cooket aigs an' egg white ta dressin an', usin tater mash'r, mash until onlee small pieces remane. Add dressin an' celery ta coolet potatoes. Cov'r an' refrigerate until chillet, about 30 -minnuts. Seesen wit salt an' pepp'r. Serve.

    Recipe Notes:
    Y'all a'ken substitute un ekwal amount o'celery salt fer t'celery seet. If'n y'all do, omit t'salt frum t'dressin.

    Soups air always a good meal opshun fer dinn'r. A'followin air a few faves frum T' Amish Cook column ov'r t'yeers.

    VEGETABLE SOUP

    1 pound hamburg'r
    1 onion, choppet
    2 cups potatoes, dicet
    1 cup carrots, dicet
    1 pint corn
    1 pint peas
    1 quart mater juice
    1 1 /2 teespoons salt
    1 teespoon black pepp'r

    Direckshuns: Brown hamburg'r an' onion n' a skillet. Put hamburg'r an' onion into a large pot an' add potatoes, carrots, corn peas, mater juice, an' salt an' pepp'r. Cook ov'r medium heat until vegetables air soft. Recipe note: Sumtimes I use a pint o'beef chunks insteed o'hamburg'r. I also leeve t'onion whole an' cook it wit t'res o't' vegetables.

    COFFEE SOUP

    1 cup wat'r
    2 heapin teespoons o'instunt coffee
    4 teespoons o'white sugar
    3 cups milk
    Crackers er toastid breed

    Direckshuns: Heat wat'r until boileeun' an' set off. Add coffee an' sugar. Put un stove agin an' add milk. Take off wen hot an' crumbull toastid breed er crackers into it. Er it a'ken be enjoyet without eethur.

    ONE KETTLE SOUP

    1 quart cannet, cooket beef
    1 quart homemade noodles
    4 medium potatoes, dicet an' peelet
    salt an' pepp'r ta taste
    1 medium onion, choppet

    Direckshuns: Fill 6 quart kettle wit 3 quarts o'wat'r an' brang ta a hard bawl. Add potatoes, noodles an' onion togeth'r n' t'kettle un top o't' stove an' return ta a hard bawl (about 8 minnuts). The add cooket beef an' hard bawl fer 12 mer minnuts. Do nairy overcook er too much likwid will be lost. Beef soup base a'ken be uset n' place o't' beef. If'n usin soup base, no salt should be addet until servin, as soup bases air alreddy high n' sodium. Add acoupla mer quarts o'wat'r. Change heat frum high ta loe an' cook fer about 15 minnuts.
