Iguana like any other meat has to be cooked properly, when done right it is delicious. But usually it is cooked like stewed chicken and does not have a lot of flavor of its own. Tough little critters and needs to be slow cooked to soften them up.

Good shot Dan, Harriet is right they are shy and hide when they discover your trying to take their photograph.

I have been snorkeling along my sea wall for the last couple of weeks. Two days ago I came across a lone Queen Angel fish that not only did not hide from me; she seemed curious and came out towards me. Then her behavior was such that I thought she might be guarding a nest. I want to get my digital still camera in the housing and try to photographer her.
I also saw, on two different days a small school of about 6 or 7 strange fish. The closest I can find in any of my books is Barbu? Anyone else seen these guys? Will try to shoot them too.
