Sorry BamaB's my captain has since passed away, but many of the guides can take you on a variety a trips,so if you know what you want to do then they will take you - otherwise they will go where they want to take you. No Worries - everywhere is beautiful.
We did use Amigos Del Mar //ambergriscaye.com/amigosdive/index.html
//ambergriscaye.com/pages/town/fishing.html
to rent our flippers so we did not have to carry any and they are a big outfit so we went with them for our night dive/snorkel at Hol Chan. It is awesome. Many people don't do this tour because you can't drink all day and then swim safely at the reef! But I don't drink so no matter to me and it is different day & night. Amigos can handle your fishing needs, never used them though.

But if you are fishing to eat - we had fun with net caught sardines for snapper, grouper, jack, etc.
Some of my favorite spots for both - Mexico Rocks, Tres Cocos, and towards Caye Caulker there are known fishing areas. Also have lobstered - it is hard work. Shelling is much easier!
Mangrove snapper & shovelhead shark in the murky rivers south of AC - not cool for snorkeling though. Many small shell on the backside of the island & there are tiny uninhabited islands you can stop at for shore lunch & a dip.
What hotel you are staying at may work with specific guides to make your trip easier. Also how much $$ you want to spend is a factor. We stayed in cheap rooms to spend more $ on private boat. If you go with othes it can be cheaper.
Also we did bring some fishing gear - hooks, folding tools, line & they are great gifts and makes sure you don't have to use rusty stuff! It happens fast in San Pedro Town!
One more thing... the weather does play a part in your activities - during a storm you can't always go where you want to go.
Belize it!
