I don't dive either... In fact only three of the people on this trip dive. Luna Beach is perfect for anyone and Roatan, like AC, has tons of stuff to do other than dive.
It is only a 10 minute walk to town. You can also take a water taxi for $1.50. You just stand on the end of any dock and point which direction you want to go, or a regular taxi for very little.
The resort also has a full restaurant and several bars right by the pool.
I was able to use my AA miles on Taca as they are a code share partner. 35,000 for SFO to Roatan and then BZE to SFO. The puddle jumper and SAP to BZE flights were only about $250.
