There's not much that you can't do from the island that Belize City offers. The only deal is that it takes longer to do. One night and an organized tour of the city may be worth it if you want to see a little of the history of the city but that's about it.

Don't know that I'd recommend staying in Belize City, but if you have time, definitely try to stay on the mainland at least a couple of days. There are plenty of choices of places to stay in the jungle. Look at Jaguar Paw, Caves Branch, Banana Bank, Jungle Dome. Not much in the way of nightlife, but you will get to see the "other" side of Belize, which shouldn't be missed. We just spent a few days at the Jungle Dome before heading to AC and had an AWESOME time!

Belize City was not for me. Downtown was kinda scary. I would recommend the Cayes. I enjoyed the main land Cayo district and would love to see some of the river resorts but staying in Belize city is not for me. I enjoyed Caye Caulker also. It is a smaller Caye and little to no night life there.

Banana Beach along with Mata Rocks were extremely helpful and if it weren't for our dairy allergies we would have spent several nights at each place. We decided a Villa would be benefical for us all around. I came across a beautiful one from one I could tell. If you go into Trip Adviser, both places have outstanding reviews.

I've tried other hotels, but I always go back to Ruby's. The oceanfront rooms are US$50 and are right on the sand. They're hurricane-proof, concrete construction, so noise hasn't been a problem.

As to Belize City, a good bet is the Best Western. It's out of downtown a little, so it's removed from the hustle of the city center. I would recommend using the city as a base for mainland excursions, because staying on Ambergris adds time and expense to your mainland travels.

I export Traveller's rum, and business requires that I split my time in Belize between the Cayes and the City. If business is going to keep me in Belize City for a few days, I stay on the mainland overnight. The alternate is staying in San Pedro Town and hopping back and forth to the City. So, I'd either spend a couple of hours every day on the water taxi or spend a lot of money on airfare. Your mileage, as they say, may vary.
