The sushi chef were I eat are all Mexican. They were trained by the Japanese American owner on how to prepare sushi but they are not asian. The most important part about sushi is the quality of the fish and its freshness. You can do it yourself. Extra sharp knife, good quality rice and the seaweed wrap. Wasabi was hard to get down there but I brought some with last time down. Bon appetit.
I dont care if the chefs are aliens from another galaxy as long as the sushi is right

. And yeah I've tried making sushi before, getting the consistency of the rice always seems like the harest part. I might try hummingbird cafe's sushi soon. I hear good things so far.
