traded some of my cassava yesterday for some fresh cut Toledo range-fed shank & round beef. that beef needs lots of tenderizing but ah have too much cassava, and I luv bartering instead of paying.

Did you know that papaya can be used as a meat tenderizer?

Papaya contains papain - an enzyme that breakdown of proteins by hydrolysis (addition of a water molecule).
