Ok who out there has a great recipe for conch fritters? I don't have any conch but I'm going to try to "fake" it with calamari instead. It might not be the same, but I'm hoping it works [Linked Image]

LOL....thanks SO much miss Suzie-links! Wow, there are so many to choose from. Maybe I'll just have to try one each week until our next trip to Belize. I think I'll try the "Cottage Conch Fritters" tomorrow and I'll let you know how they come out. Thanks again Jane!

Seajay, you can also find conch in the frozen section of your grocery store...if you happen to have a "Lompardi's Seafood" in your town ...they also carry it.

MR - we don't have a Lompardi's (kind of a small town here), but we're heading to San Francisco in a couple of weeks and I'm hoping to find some up there. Thanks for the suggestion. [Linked Image]

isn't there a big clam in the pacific called a gooeyduck (sp?). I saw one in a documentary once and I thought humm, that looks good for ceviche, thinking about a conch substitute. I would try it for conch fritters too.

Your calamari will work great!!! When we got back last year (after nearly 3 weeks between BZ and Key West), I went for a two-month stretch where I had to have curried conch at least once a week. Calamari steaks cut into strips were perfect.

Hmmmm, may have to dig out that highly improvised recipe...startin' to jones...

I, too, have a hankering for conch -- in its myriad delicious incarnations. I have improvised in the past using "scungilli," which is a type of whelk, and imagine that calamari will work well. But if you want the REAL thing and just can't get it at your local seafood store, you can order it online from www.epicurexpress.com

You can also buy pre-made conch fritters and conch fritter mix from EpicurExpress, and they are quite good (though not as good as the real thing...)

I just ate some of my homemade conch chowder last week...

you can also use scallops..... and I'll be happy to pass on my recipe it's kinda famous... it's the dipping sauce that makes the difference

rastapasta - I would LOVE to have your recipe! I've heard nothing but great reviews of your restaurant PLUS I'm a "sauce" freak!...lol My fritters are still "on hold" because I haven't had time to cook (been tending to sick mom). I hope to have them this weekend but now I think I'll hold off until I have your recipe [Linked Image]
