Everyone has their favorites, and tastes in food vary, just like mileage, but I'd make these comments:
* Jade Garden is not one of the hot spots, but since I've been going there (13 years or so), it's been dependably good to excellent, and quite a few locals go there regularly.
* Before Wil Lala sold Caribbean Villas, he said that in the past year or so the consensus favorite restaurant of his guests was, perhaps surprisingly, Blue Water Grill.
* It's hard to go wrong with the tried-and-true established places, like Elvi's (touristy, yes, but still good), Ruby's for a quick breakfast, the original JamBel Jerk, La Popular for baked stuff, most of the street vendors.
* I've never had a bad meal at any of the above, plus Sweet Basil, Capricorn, Papi's, Caliente, among others.
